Dinner Dilemma

Help me plan dinner! We are having friends and their 2 month old over for dinner tomorrow. I can't figure out what to make. It's supposed to be rainy but a high of 70.

I want something delicious and fairly easy and I'm just blanking. No food restrictions, and we had chili last time they came over.

  • I like to make either a gravy (some people call it sauce, I don't know what to tell those people) and meatballs with some pasta and a nice big salad, or a roasted chicken.

    They're my favorite meals to make for company because, like chili, a lot of  the prep work is done in advance and you can tidy up the kitchen before company shows up... Minimal work once they are there and you are trying to entertain (with two babies, no less!)

  • I vote for Cajun chicken pasta on Skinnytaste.com.  I found this site/recipe from the Monday Meal Planning thread.  It was really good -- I might even add some shrimp to it.  I think it's @ugabamafans DH favorite meal.

    We have made these stuffed shells for dinner parties before and everyone LOVES them!  You can prepare ahead of time, stick them in the fridge, and then an hour before they come over, pull them out and get them in the oven!  Super easy, super delish!

  • Creamy one pot pasta (pampered chef recipe- see pic) But over the years I have made some changes (read: improvements :) ) I use full fat cream cheese, and I use sundried tomato pesto instead of straight sundried tomatoes. In addition I use bow tie pasta instead of penne. I also pan sautée chicken breast in olive oil and Italian seasoning and garlic salt, and then add the sautéed chicken at the sane time as the broccoli and carrots. This meal is absolutely delish and is also really good reheated the next day!

    Ooh I've never tried that particular recipe but I love Skinnytaste. We usually have at least one recipe from there each week

  • Beef stew with pasta or bread plus a salad. You can throw in some fruits or dessert.
