WFD?

I'm meal planning for the week and have no creative ideas (just the usual stuff). The weather just turned and it's supposed to be rainy and about 10-15 degrees cooler than it has been for a while. Is it weird to eat variations of potpie all week? 8->

What do you guys have planned for dinner tonight/this week? :)

  • Chicken and Rice soup in the crock pot. New recipe, so I haven't tasted it yet, but it smells amazing.

  • Spaghetti and meatballs
    Pulled bbq chicken sandwiches
    Bean and cheese empanadas
    Soup
    Chicken piccata

    (All served with veg or salad, just not sure what on each day)


    Do you make the empanadas yourself, or are they premade? I've always wanted to try making empanadas myself!

  • I made a huge pot of chili last night so we will have leftovers for a bit.

    I will probably do a chicken and rice casserole or a tuna noodle casserole later in the week. I am loving the slightly cooler weather!!

    Lucky! I wish I had someone in my life who would gift me squash! :D I've been craving butternut squash lately, so I may have to pick one up to roast in the oven.

    What's your favorite brand of veggie chicken? I have some Gardein plain chick'n strips in the freezer that I need to try (I've only tried the breaded ones so far). I might use them in a potpie. :)

    These Asian meatballs. I double the sauce in the oven and put them on a bed of rice with a side veggie. Hubby loves them.

    I have some freezer meals already, so if I am lazy, I just have to decide if I have enough time to do a crock pot or if I am going to pull out an oven meal (pop in oven frozen, cook for an hour).

    This week the plan is,
    *Hawaiian Chicken with coconut black bean rice (next to no work with a crock pot and rice cooker).
    *Cupcake meatloaf, potatoes, veg
    *Fried chicken breast, potato pancakes (leftover potatoes made into patties and cooked), and green beans
    *Some form of spaghetti. I crave lemon basil spaghetti, but have no lemons.
    *Steak, Potatoes, and a veg

    DD1 - 11/11
    DD2 - 10/13

    Monday- sweet potato, kale, bacon and black bean hash
    Tuesday- bratwurst
    Wednesday- shrimp scampi
    Thursday- pesto grilled cheese and butternut squash soup
    Friday/Saturday- have friends in town, will go out or grill

    That's what I have in my freezer! :) I bought the teriyaki chick'n strips to experiment with, planning on just saving the sauce for something else.

    I've been really pleasantly surprised by their products (especially love their little sliders!). Their products are what made DH decide to go vegan!
  • Tonight is leftover rotisserie chicken and corn on the cob.
    Tomorrow will be chili and I'm hoping that those leftovers will continue sounding good for most of the rest of the week. :)

    Coconut black bean rice.
    in a rice cooker add 1 1/2 C white rice, (you can do 2C rice, works the same, just add more water) 1 TBSP brown sugar, 1 tsp salt, 1 1/4c water.
    Mix. I you need it sweeter or more salt add it. This is one of those "here is the base, you tweak it". It will dull out a little bit as it cooks.

    Turn the rice cooker on and let it go. It will take almost double the time to cook. Near the end you may have to add another 1/4C water so it cooks the rice all the way. I have made this a million times with 1 1/2c rice and half the time more water is needed, the other half not. *shrugs*

    After rice is cooked, drain and rinse a can of black beans (I'm sure another bean would be fine). Or I will add a cup of dried beans that I let set in water over night (so they plumped up) and had already cooked. Mix rice and beans together and you are done. The rice heats up the beans.

  • Tonight we are having hamburger steak w gravy, fries and sweet peas (good ol' Southern food!)

    Also this week we are havingΒ pork chops, baked sweet potatoes and lima beans. Β Other than that, I'm not sure. Β We will probably have either baked chicken with squash casserole or italian beef sandwiches with a steamed veggie, but I haven't decided. Β And we usually get takeout or go out one night.

  • Today is our anniversary, so tonight for dinner we're making grilled ribeye steaks, baked potatoes, salad, and apple crisp. Β Also, I will have a small glass of wine, which I'm kinda stoked about.

    Other meals this week include pork chops w/ delicata squash and green beans, chicken and dumplings, and butternut squash soup. I made quiche yesterday.

    That makes me sad. I want chicken and dumplings. While I'm half Hispanic and love my Mexican food, my ol southern paternal granny lived with us my whole life so I looooove my southern comfort food. My full Mexican man does not, so it doesn't get made much. He's going to have to deal with it this week. ME WANT CHICKEN AND DUMPLINGS!

    Thank you! That would be fantastic, if you don't mind! I love seeing other people's weekly meal plans (yeah, I'm weird). I have been in a rut just making the same 6 or 7 dishes for a while. Need some inspiration! :)

  • Thank you for all of the ideas ladies! This is what I came up with for this week:

    -Black Bean Burritos w/ Broccoli Salad
    -Spaghetti Veggie Medley w/ Marinara Sauce and Garlic Bread
    -Chick'n and Dumplings (I'm excited to "veganize" this dish)
    -Taco Bake (taco seasoning mixed with brown rice, beans, spinach, salsa, with crushed tortilla chips on top)

    We'll have leftovers a couple nights and probably go out one night too. :)

    - Apple pecan salad with chicken
