"House Bitch" Soup (NBR)

Today I am using a leftover roasted chicken to make soup. After cooking the carcass for several hours to make the broth, I usually just throw in a bunch of random vegetables plus whatever else I have lying around. I don't follow any recipe and just hope for the best! This creative cooking "method" was taught to me by my mother who gave in the name "House Bitch" Soup.

What are some of your favorite ingredients or seasonings in chicken soup? Or do you have a favorite recipe? Please share! I need some inspiration!! :bz

    We love soup at our house! I have 2 on the menu for this week and am always looking for new recipes!

    This week we're having roasted butternut squash soup and cabbage tortilla soup (I had a head of cabbage so did some research on Pinterest).

    Chicken, veggie and noodle soup is not one of my fortes. For some reason I can never get the broth right.

  • We grow our own herbs, so I usually throw in whatever I currently have an abundance of. One time I used minced oregano and basil and it was great! Last time I used rosemary and it was also pretty good. I also always make my own croutons for the soup. I just cut up whatever bread product I have on hand, drizzle with butter, and bake. Mmm....I might have to add chicken soup to our menu this week. We're already having a coconut chicken soup, but you can never have too much soup!

    I don't really like chicken soups, however I just started a beef and vegetable stew in the crockpot. I use red cooking wine, various vegetables, stew meat, garlic, can of diced tomatoes, bay leaf, pepper, and a dash of salt. This is my favorite stew recipe that I make. It's very simple and very tasty. I am soooo happy fall is finally here.

  • Ground up rosemary is always good, along with basil, or even parsley flakes. I love adding carrots, shallots or green onions, tons of chicken (i love meaty soups, mmh!), and just a slight dash of beef stock in with the chicken stock, for a richer flavor. Generally 1 part beef to 2 or 3 parts chicken stock.

    As for noodles, I love boiling udon stirfry noodles, they're almost like a slightly firmer/denser version of Campbell's chicken noodles. That or Reames' homestyle egg noodles, which have more of a kluski type of density, but are generally my second favorite with soup noodles

  • I just made chicken noodle soup! For dinner last night but house bitch soup sounds better. I used a oven roasted garlic and rosemary chicken, carrots, onions, potatoes, celery, peas, egg noodles and grilled crusty bread with olive oil and garlic to go with it
  • I love "Thanksgiving Soup", same as @honeybee3 boil the turkey carcass, pick off the meat, throw in carrots, onions, potatoes, herbs (unless your like me and rub your turkey down with so many herbs that your soup doesn't need any), but you also throw in some cranberry sauce, stuffing, and maybe some mashed potatoes. It's soooo good! I'm making a version this week but with chicken and homemade croutons instead of stuffing. I really like the cranberry sauce in there, it's different & unexpected
