What's on the dinner menu today?

I've been major slacking in the kitchen department these last few weeks and feel so bad that I haven't had the energy to make a good home-cooked meal. I think today is the day. I stayed home from work due to nasty nausea that woke me up at 4am! Now that I'm feeling "better", DH and brats deserve to eat good. My menu for today...white rice and beans, pork chops, fried green plantains and a green salad. Hopefully I can keep it down. What will you ladies cook if cooking at all?? Lol...

  • I'm going to try these.  I feel like they would go better with mashed potatoes but I really want baked.  And I guess I should make a veggie for DD...

  • We're having left over spaghetti that I had froze a few weeks ago. I have zero desire to cook myself, so I'm going through my freezer stash for right now.

  • We decided to have Linner. We just moved to another town and found out that my fav wing place has a location here! Honey bqq and medium hot sauce wings here I come!

  • All sound sooooo good...I am getting hungry already!!! I'm hooked on tamales right now (just ate one).. my neighbor makes the best...I've posted this already but can't help it. I told her I'm expecting so now I feel I have the liberty to ask for them when I want.  :D

    I have never heard these terms before...Is Brinner breakfast for dinner? Because if so, I could do that every day. But unfortunately we only do it about once a week...

  • I put a frozen meatloaf in the crockpot before work this morning so it will be that with mashed potatoes and probably roasted Brussel sprouts.

  • My DS has a cold so it's homemade chicken noodle soup (in the crockpot) and fresh bread.  There will definitely be enough for a freezer stash.

    I LOVE homemade chicken noodle soup! I can't wait until it's cool enough here for soups. I hope your DS feels better! Nothing more sad than a sick kiddo.

  • Our garden was overflowing with bell peppers last night that DD1&2 helped pick.  Using some of them to make stuffed pepper casserole.

    Where I am from, a walking taco is a little bag of tortilla chips or corn chips (Fritos are the best!) with taco meat, cheese, lettuce, etc. inside the bag with the chips. Eat out of the bag with a fork! Yum! Our local amusement park makes the best ones!

  • ZERO desire to cook tonight so i'll probably have a greek yogurt and granola with fruit and the baby and hubs will have leftover roasted chicken, broccoli and carrots (i'm a vegetarian FYI).

  • Butternut Squash Soup. And pumpkin cake for dessert. Yes, I have fall fever.
  • Pb&j for the kiddos. No motivation here. Not sure what I am going to eat or the husband. He might be on his own! I am also contemplating blue box Mac n cheese but would feel guilty eating it in front of the kiddos...
  • Turkey meatloaf, potatoes and roasted Brussel sprouts here. Hope I'm well enough to eat it.

  • Poop helper...Homemade black bean soup here :)  And by homemade I mean it's mostly cans lol...

    Saute one yellow onion, a few cloves of garlic, and one red bell pepper in olive oil.

    Add the following to the pot:
    3 cans of Rotel Tomatoes (your choice of heat)
    4 jumbo cans of black beans (2 cans I food process so they are smooth)
    cumin, chili powder, salt, pepper, and garlic powder to taste

    Simmer for 20 minutes. (You can add corn starch if you like it thicker).
    Serve with greek yogurt instead of sourcream, shredded cheddar, and croutons or tortilla chips (because you need a little crunch!)

  • My husband and I are going out to a fancy dinner for job recruitment for him. Food will be good but it means finding something to wear that hides my bloat...
  • Homemade Mac and cheese with Swiss and Gruyere cheese. With bacon and peas mixed in!
  • Beef stew. It's been in the crockpot all day & now smells awful to me. At least DH will get a good dinner! Not sure yet what sounds good to me...

  • @babieseverywhere that's exactly how I feel now. DH came home and said man those beans are delicious. I'm like yuck stay away...that food looks disgusting to me now! I am glad I cooked before this wave of nausea and exhaustion came over me.
  • I suck... Moving in two days and running around like a headless chicken. I have celiac so no fast food for me and DH.

    I did eat some bomb ass dark chocolate granola and almond milk though!
  • Made steak,  potatoes, and rice.  Ended up eating a bagel and rice.  My husband ended up eating 2 steaks.........

  • I picked up 2 rotisserie chickens last night and we had chicken last night. I purposely got 2 because I wanted chicken pot pie and had no desire to handle raw chicken. I just had to make the sauce and put it together. Smells so good!

  • DH made his stuffed shells (noodles stuffed with ricotta and 5 Italian cheese, covered in marinara sauce).  YUM :)

    Quinoa pasta with marinara. I can't stomach meat or poultry these last few days.

    Mmmm we had a salad with lots of veggies, beans and Quinoa last night. DHs 1st time having Quinoa he loved it.

    Finally had the energy to grocery shop..yay for that!

    Then we ordered pizza. For the second time...since Sunday.

    ...And I ended up eating a bowl of ice cream instead. Yup.
  • I actually made dinner two nights in a row. I'm counting that as a win. Tonight I made green beans with bacon, crispy chicken, and cheesy potatoes. Some of my favorite comfort foods.
  • We had some medium-well ribeye steaks, green beans (southern style), loaded baked potato and some cornbread just because I NEEDED it. So friggin delicious!

  • Not the lentil soup! DD needs a break from fiber...I've never encountered so much flatulence from such a small body before.
