Anyone can homemade spaghetti sauce?

I just ordered 50 lbs of tomatoes!  If you have a kick ass recipe, I would appreciate you sharing!  :)

  • I made some last year and need to get started this year. But I just kind of winged it, didn't really follow a recipe just added different spices as I went to taste. I blanched and peeled all the tomatoes and diced them up into bigger pieces. Simmered the tomatoes in a pot with some tomato paste, a few garlic cloves, parsley, oregano, salt and pepper and chopped onion. I added a little water to make it a nice consistency. Then when I put it into pint jars added sea salt and lemon juice to the top.

    I think this year I am going to try making a few with mushrooms and green peppers too.

  • I only water bath can, I assume that makes a difference as to what I add to the mix?

  • I just did it last night in a water bath canner. I just left the peels on and threw water, the tomatos, tomato paste, garlic, onions, peppers, basil and Italian seasoning in there. I let it simmer for like an hour, filled jars and bathed them for 30 to 40 minutes. I had one partial jar that I couldn't can so I used it tonight for lasagna. SOOOOO good.

    @shortstuff15, how many pounds of tomatoes did you use?
  • Honestly I have no idea. They were homegrown and I needed to can the ripe ones before they got over ripe. I just googled canning spaghetti sauce and went from there. It was probably only 10 to 15 pounds of tomatos but I don't know for sure.
