Need veggie recipes, also salad question

We really need to eat more veggies.  I have seriously slacked off since we moved.  Any recipes that we would all enjoy?

Also, do you buy the bagged salad?  I have not bought it in a long time, especially since they had all the salmonella concerns.  But I thought it would be an easy way to try to get the boys their veggies once/day.  We have a lot of evening activities this fall, and I work 3 days/week.  If so, what kind do you buy?

  • My kids mostly like raw veggies: carrots, broccoli, peppers, cucumber. I make potatoes, corn, and black beans pretty frequently; and serve salad with dinner a few times per week. Occasionally I buy the bagged salad, but usually I get a pack of organic romaine and make my own salads.

    Roasted sweet potatoes are a big hit with my picky toddler. I prefer them savory with a bit of garlic powder but you can also make them sweet with honey/cinnamon/maple syrup etc. Roasted butternut squash too.

    Usually DS will only eat carrots cooked (steamed specifically) but I made a grated carrot/raisin salad the other day that he liked. I just used some orange juice and olive oil as dressing as he can't have mayo

    I also use the food processor to finely chop carrots, onion and bell pepper as a base. Sometimes zucchini too. I sauté that and use in chili, meat sauce etc. Once you add in ground turkey or beef you don't even notice the vegetables.

  • I've been roasting them lately and we can't get enough. Just drizzle some olive oil, press some garlic, add some Italian seasoning.... heaven!

    For salad I usually buy a pack of romaine hearts and a container of mixed greens. Then I mix the two.
