Any Canners/Preservers out there?

I just made a batch of pickled Okra last night fresh from our crop share!  I'm pretty excited to try them.  I've made quite a few batches of refridgerator pickles this year, but since I found out they have a higher risk of listeria I haven't touched them.  The okra was made in a canner so it should be safe.  And we can eat them sooner.  Anyone else canned anything?

  • My husband is pretty big into this stuff. Pickles, ghost peppers, habanero, tomatoes. He makes his own mustard and brews his own beer. He's a nut.

  • I have been making jam like crazy since we moved from NYC to CA last month. We finally have a real kitchen and pantry and I've been wanting to learn to can for years. The local farmers markets make it even more appealing. I bought supplies for hot canning and have been vigilant about following proper procedures to avoid listeria. It's been a lot of fun, especially since I don't anticipate having much time for crafts after January.
  • Usually I'm stocking the basement with preserves at this time but this year I've been so busy with work, and so tired at the end of the day that I haven't done a thing. 

    I'm hoping NFL sundays will be a good time to put up whatever I can find at the local market. These pictures are so inspiring!

  • my sister and I did about 100lbs of tomatoes, 3 dozen jelly jars and 2 dozen large apple sauce this summer.  Lots of work but always nice to have some garden grown stuff through the year :)

  • I made white peach vanilla bean and strawberry preserves this summer. Planning to can a bunch of peaches this weekend. We do. Bountiful baskets, and they usually have some awesome add ons that make canning great.

  • In June we made freezer strawberry jam (I missed out helping with the raspberries). Last weekend we canned peaches, next are pears and applesauce! I love canning! I would love to get a pressure canner so I can can my chili. One day...

  • My mom has been teaching me the art of canning this season :) Together we've done green beans, tomatoes, potatoes, salsa, pickled beans and corn, vegetable soup and put up a couple hundred ears of corn! Lots of work!

  • My H got into canning tomato things a few years ago when we planted our first garden. So far, we've done 20 cans of homemade pizza sauce-we give away about half. H's family all makes homemade pizza. And we also did salsa.
    @sassquatch‌ This is the recipe we've used for a few years and the pizza sauce/salsa are a great way to use up a ton of tomatoes. I think there is a tomato pasta (non meat) sauce, too.

  • misslizzy82 - For jam (strawberry and strawberry/rhubarb) we just use a standard jam recipe - sugar, pectin, little butter to cut the bubbles.  For tomatoes, we do a few diff ones.  We do just canned tomatoes so peal and boil then can.  Then do spicy - peal, boil with jalapenos, onion, bell peppers and then can.  Put 1/2 tsp salt and 2 tsp lemon juice per quart (both reg and spicy) and then we usually do a salsa which is a recipe my sister found.  Not sure the details on that one.

    For apple sauce, we did large pot of peeled, sliced apples with 1 cup sugar (half white, half brown) and 2 tsp cinnamon.  cook down and then use a blender stick to puree.  As long as its boiling, and you use hot jars, you can can them w/o the canner.  We just put the hot sauce in hot jars, set them on their top for 15 min and then flip.  They should seal themselves.
