Oh i like this! I normally cook the same meal for us to eat the coming two days and we have our hot meals at work. We have what normally is percieved as a "lunch" for dinner once we r home.
So lunch for us at work is
M & T: Stir fried Chicken with veg . And steamed rice
W & T: macaroni with veggies and minced beef
Our weekend is friday and saturday. We eat at my parents on Fridays and i think i will cook chicken with spinach basel spaghettie

Monday - tilapia, rice, peas Tuesday - sweet and sour slow cooked pork with figs and mashed sweet potatoes Wednesday - leftovers Thursday - rigatoni and homemade meatballs from freezer Friday - chicken sausage, Mac and cheese, cauliflower or broccoli
Nobody pass out, but DH actually came in the living room yesterday with the week's meal plan completed! Dude, where is my husband and who is this strange man who not only expressed an opinion but wrote it down in plan form??? Lol. So, plan is crockpot black bean, corn chicken on Monday and Wednesday, tacos Tuesday and Thursday with rice and beans, and spaghetti with bread and salad on Friday.
How do u ladies cook everyday? For the ones who posted a different dinner every night and 0 leftovers. And for the ones who freeze, when did u have the time to make and freeze that stuff?

I'm doubling up right now bc I have a 4 month old and a 2 year old, so I'm pretty much in survival mode. When I don't double up, I mix longer (30 min max) recipes with very quick things like quesadillas. Also, I repurpose leftovers. Taco meat becomes nacho topping or part of enchiladas. Buffalo chicken becomes pizza topping. Good planning is key! And we always have a fast backup like sandwiches or hot dogs or eggs in case good planning goes to the dogs.

I did post a leftover night but that is because I try to cook once and eat twice when I can. But in terms of cooking every night, I have over the years accumulated healthy recipes that I can cook with few ingredients and if possible, under thirty minutes. And that the kids will eat at least some of. I rotate mostly through those during the week and save the weekends for bigger culinary adventures. I do freezer meals on weekends too. Like triple batches of soup or meatballs.
Thanks ladies. I'd think though that qasadillas and other dishes would take a lot of prep work? I find myself to like dishes where i can throw everything in one pot with as little prep work as possible so that i can do something else while boiling/baking/simmering and try to choose things that are less hands on

Sunday I cooked during DS's 2.5 hr nap. I made the meatballs and put them in the crock pot. I breaded chicken cutlets and put them in the freezer so tonight just need to bake them. I cut up all my veggies for the week so on the give night I just need to steam them/sautee them, whatever I am doing. I try to make sundays nap LOTS of cooking and prep. I will also put like 2 quiches together bc they are so easy and quick and throw them in the freezer. So right now I actually have 3 in there for meals when I dont want to cook. Will prob use 1 each week until they are done, but make more along the way.
F- Homemade pizza and probably salad. I have corn chowder in the freezer too for DH and I.
Our neighbor gave us the biggest zucchini i have ever seen from her sister's garden. I still don't even know what to do with it. I can probably do 3 different dishes (maybe zuc+ tom stew, zuc bread and not sure what else). I hope it lasts til the weekend!

Now that i have a live out maid come and help for a couple of hours in the evening twice a week i'm getting her to do the prep work and dishes for me while i do the cooking which is great! Just need to do my planning/grocery shopping ahead

It's freezer clean out week in our house... I realized we had let some uncooked/cooked things linger for a while in freezer.

W - Spaghetti and Turkey Meatballs, salad
Th - BBQ Pork (from M) pizza, salad
I see we eat a lot of salad... oh well, it keeps me from having arguments from DDs and DH about other veggies
