I make fish tacos a lot. I take shrimp or fish sticks. cook them. then put into taco shells with cabbage (bagged cole slaw minus dressing), add avocado, and sour cream. I use whole wheat soft taco shells. I also mix in chipotle spice into my sour cream for a little kick.
Baked salmon. Put fillets in a pan, drizzle with olive oil, sprinkle with salt and pepper (or lemon pepper). Bake until it flakes (typically 20ish minutes). DON'T preheat the oven. Put the fish into a cold oven.
And one of my favorite sites is the smitten kitchen. She's not exclusively vegetarian, but it seems like most of her recipes don't include red meat or poultry.

Eta: Target. If it's thawed, not long. You do have to soak the planks in water for about 30 minutes.
