I love this Brussel Sprout Fried Rice from Isa Moskowitz: https://www.theppk.com/2014/02/brussel-sprout-fried-rice/ We usually eat it as a main dish and I add extra brussel sprouts. If you're not a brussel sprout person you can swap out for zucchini or broccoli.

We also do a ton of salads, spring mix and baby spinach with green onions and tomatoes are the base, then I add whatever I have. Adding goat cheese and pine nuts make the salad super yummy. I also always have good flavored olive oils and vinegars on hand for dressing.
In the morning- add spinach to your smoothies. You can't taste it, add a huge handful or freeze baggies full so it's easy to grab and blend in th AM.

If you need a vegetarian/vegan version, just omit the beef and broth and use vegetable stock instead.
Some other favorites:
Baked potatoes loaded with veggie 3-bean chili
Enchilada casserole with black beans and veggies (you can go with any vegetables you like)
Veggie stir fry with marinated tofu over rice or noodles
Breakfast burritos with Cajun tofu scramble (this has spinach, tomatoes, mushrooms, onions for the veggies)
Roasted vegetable panini sandwiches (you can use anything! We love red peppers, zucchini, mushrooms, red onions, basil, and wilted spinach cooked with garlic)

Do you prefer raw or cooked veggies? Is your problem that you don't think to eat them or you don't like them?
1) think about how healthy it is for you and baby. I do that with fish...just kind of suck it up and pat myself on the back
2) add a veggie side dish to every meal....side salad, sauteed spinach, etc
3) have veggies with ranch as a snack
