Just kidding, no one cares what I've gained.
However, I am going to beg for your help. I have definitely not been getting enough veggies. Please gimme your wonderful recipes so I stop getting so fat! ;)
Smoothies, sides, meals, whatever. TIA you wonderful meanie-head bishes :D

  • This was not what I expected when I opened this thread :)

    I love this Brussel Sprout Fried Rice from Isa Moskowitz: https://www.theppk.com/2014/02/brussel-sprout-fried-rice/  We usually eat it as a main dish and I add extra brussel sprouts.  If you're not a brussel sprout person you can swap out for zucchini or broccoli.

  • Damn. I was gearing up for battle. I'm not much for the vegetables so sorry I'm no help.

  • I add 2 cups of kale to a protien shake, along with an apple. The apple helps cut the bitterness of the kale, the protien keeps me satisfied for a bit, and I get in 2 servings of veggies for breakfast! I also really enjoy butternut squash coated in a bit of canola oil seasoned with salt, pepper, garlic powder, and onion powder, roasted on a baking sheet at 400 until cooked through.

    Couple of these are a little more starchy:  

    - Risotto with edamamnae, spinach, and a sharp Irish cheese
    - Roasted sweet potato "fries" with sriracha 
    - Chicken fajitas
    - Zucchini and yellow squash roasted with parmesan cheese
    - Chick peas in an Indian curry marsala sauce with spinach and green pepper added
    - Sesame green beans


    I keep meaning to try a spaghetti sauce and goat cheese gratin

  • My new favorite side is sauteed zucchini and canned corn sprinkled with italian seasoning a little lime juice and at the very end throwing some parmesean cheese on. Its delicious.

  • Cuisinart broccoli and add it to sauces and chili. We had chili cheese fries last night. I made them with the simply potato fries, veggie chili with added broccoli, extra sharp cheddar, and Greek yogurt as the sour cream. Even MH liked it.

  • We do eggplant parm- bread the eggplant and bake at 450 for 10 min. On each side, then layer with sauce and cheese on top.

    We also do a ton of salads, spring mix and baby spinach with green onions and tomatoes are the base, then I add whatever I have. Adding goat cheese and pine nuts make the salad super yummy. I also always have good flavored olive oils and vinegars on hand for dressing.

    In the morning- add spinach to your smoothies. You can't taste it, add a huge handful or freeze baggies full so it's easy to grab and blend in th AM.

  • I love smoothies with spinach.  Right now I am doing one with spinach, lemon juice (from half a lemon) water, frozen raspberries and a splash of cranberry juice. It tastes like raspberry lemonade.  My 3 year old even requested one today!

  • It's still tomato season (at least it is here in the PAC NW). I love getting fresh mozzarella from TJs-the little round ones called Ciligiene. They don't even need to be cut. Add halved cherry tomatoes, olive oil to taste, salt to taste. Perfect hearty salad. You can also add a little of your fav vinegar if you want. Balsamic is traditional but it's good with any flavored vinegar. I also love cucumbers right now. Slice them up, add sweet onions, rice wine vinegar and a little salt and olive oil. Yum! I'm all about simple.

  • Saute spinach with some garlic and then add a bit of parmesan cheese :).  Delicious!  The spinach cooks down to nothing, so you can easily eat 1/2 a bag without it seemingly like much.

  • Veggie Lasagna?  I'm all about covering my veggies in melted cheese & tomato sauce.  Or bacon - saute any veggie (works especially well with green beans!) with a strip or 2 of bacon.  You don't need much, just enough to render off a little bacon fat and infuse the flavor into said vegetable.  
  • Thank you all! You've given me some great ideas, and some of you have at least made me feel better about my lack of veggies lately. I'm currently cooking up some broccoli and cauliflower so that I have enough for the week. Next weekend I plan to try some of these as well!
  • Soup. DH made vegetable beef soup tonight for dinner. Beef broth (which we made from soup bones from the grassfed beef my parents raise), chopped beef (or hamburger works too), then a can of tomatoes, chopped onion, potatoes, carrots, frozen peas, frozen green beans, frozen corn, and fresh baby spinach. Throw in some Italian seasoning, salt, pepper, and some balsamic vinegar, and dinner is served! It was so tasty that even the girls are eating all their veggies.

    If you need a vegetarian/vegan version, just omit the beef and broth and use vegetable stock instead.

  • Forgot to mention soups and stews.   This one has been a surprise since it tastes good and is super super easy.  Silky cauliflower soup with parmesan crisp.

  • Tonight we had spaghetti with marinara sauce. I like to add lots of vegetables to marinara when we have pasta. I usually go for zucchini, mushrooms, peppers, and onions. Sometimes I'll do spinach or broccoli as well.

    Some other favorites:
    Baked potatoes loaded with veggie 3-bean chili
    Enchilada casserole with black beans and veggies (you can go with any vegetables you like)
    Veggie stir fry with marinated tofu over rice or noodles
    Breakfast burritos with Cajun tofu scramble (this has spinach, tomatoes, mushrooms, onions for the veggies)
    Roasted vegetable panini sandwiches (you can use anything! We love red peppers, zucchini, mushrooms, red onions, basil, and wilted spinach cooked with garlic)

  • Do you prefer raw or cooked veggies? Is your problem that you don't think to eat them or you don't like them?
    1) think about how healthy it is for you and baby. I do that with fish...just kind of suck it up and pat myself on the back
    2) add a veggie side dish to every meal....side salad, sauteed spinach, etc
    3) have veggies with ranch as a snack

  • I bought a jar of Roasted Red Peppers in oil and have been using them to change up simple meals/sides!   And it inspires me to add other veggies. :)

  • I second your suggestion for Buffalo Cauliflower @Anna930‌ So yummy! I often make BBQ Cauliflower the same way for DH, since he doesn't do spicy food. :) Ahh man, now I want Buffalo Cauliflower!
  • I've been buying the frozen vegetable streamers. They make a good side to any meal and there's a nice selection of them. Also super easy, 5 mins in the microwave and you're done.
  • I usually chop up as many veggies as I can and throw them in either a soup, meatloaf or spaghetti sauce. Especially when I need to use them before they get bad.
  • One of the super easy things I do is buy baby carrots (pre washed) and then pre-made tzatziki or hummus and snack on them throughout the day.

    Slightly higher up on the effort level is buying mixed frozen veggies and pouring them in a small bowl to microwave them as a side of dinner-- you'd be shocked at how many pre-mixed varieties there are in the frozen aisle and they can actually be fresher/more nutrient dense than fresh veggies-- if you hate the flavor of them, buy pre-shredded cheese or parmesan and sprinkle over the top for the last 30 seconds of microwaving (caution, cheese is a real pain to scrape off the bowl later)-- alternately, I will sometimes throw a couple tablespoons of butter into a saute pan and dump in whatever frozen veggies we have in the freezer-- takes 5-10m to heat up on medium heat and it's delicious.

    One more notch up, as discussed above, is starting with a couple tablespoons of olive oil, throwing in frozen or fresh spinach, broccoli, onion, or peas (all require 5-10m), and then adding red sauce of your preference (warm another 2 minutes) and then pour over a pasta of your choice (extra points for omega enriched or whole grain pastas).
