What's for dinner this week?

Sun - chili cheese dip with chips, roasted corn, melon (family reunion - this was my healthy contribution)
Mon - garlic chicken, mashed red potatoes, roasted broccoli
Tues - BBQ chicken, sweet potato fries, cornbread
Wed - out
Thurs - chicken parmesan sandwiches, garlic green beans
Fri - chili lime pork loin, mango, cilantro lime rice
Sat - out

  • Sun - Beer Can Chicken/Roasted dill potatoes/Corn on the cob

    Mon - Smothered burritos/Southwest salad (leftovers from Saturday)

    Tues - Beer Can chicken (leftovers)

    Wed/Thurs - Meatballs/Summer Squash Sautee/Garlic bread

    Fri/Sat - Fish Tacos/Refried Bean Casserole

    Sun/Mon (Labor Day weekend!) - BBQ Pork Steaks/Baked beans/Cole Slaw

    (Hopefully all of this food will entice LO to come OUT on his due date next Tuesday, lol. :D)

  • I'm so excited for this thread!! Plus I get to finish my plans for next month!

    Sunday: beef taco pasta
    Monday: broccoli fettuccini Alfredo
    Tuesday: Philly cheesesteaks
    Wednesday: taco bake
    Thursday: spicy sausage and broccoli pasta
    Friday: possibly out/ or enchiladas we shall see how I feel!
    Saturday: same as Friday.

    Dh is loving these meal plans, sometimes. He works noon to 8pm and gets to see what we are having for dinner because I bought two weekly dry erase boards and write out our meals for the month on them. He looks at what is for dinner every day before he leaves and decides if he should eat with his clients or not. It's really kinda funny. This thread has helped me get more organized so I have everything I need and if I go to the store for anything it's $10 or less!

    Also, if you haven't tried the budget bytes black bean quesadillas, you are totally missing out!!!! My kids all love them. I make a batch for lunches and snacks once a week and they don't last!
  • @ambershaw512 I'm stuck on the spaghetti and mashed potatoes. Totally sounds like a pregnancy craving to me. 

    Monday - Crab and avocado pita pockets
    Tuesday - Pot roast
    Wednesday - leftovers
    Thursday - Pioneer Woman lasagna roll-ups (makes 6 freezer portions to use at a later date)
    Friday - Chicken Enchilada Bake

  • Gosh I wish I could cook meals like that but that's just not going to happen. I have no desire to eat at night so DH cooks single meals for himself. I attempt to every now and then but don't really put much effort into it. Wife of the year right here

    Saturday: Whatever MIL makes for me :)

  • For the second week in a row I actually did some meal planning! Aaaaaand I managed to stay in our grocery budget this month! (Last month we went over budget by almost $200--WTF!?)

    Sunday: gluten free pizza, potato wedges, salad

    Monday: gluten free fried chicken, mashed potatoes, broccoli and mayyyyybe corn on the cob if I feel like dealing with that

    Tuesday: girls night- hubbs can fend for himself

    Wednesday: Veggie curry and rice

    Thursday: Burgers! 

    Friday: Tamales with beans and rice

    Saturday: Frittata with green salad 
  • I don't have a particular day for things because it's my last work week, and my schedule is kind of wonky. But I bought stuff to make teriyaki chicken burgers with grilled pineapple and sweet potato fries, pasta with marinara and broccoli, pulled pork sandwiches with roasted red potatoes, aaaaand I don't know what else yet. I might make some salsa chicken in the slow cooker for FI and DD on the night I work until 10.

  • Sun - 3 packet pot roast in the crock pot with melting potatoes and salad
    Mon - Pork chops and gravy in the crock pot with mashed potatoes and salad

    Rest of the week:
    Buffalo chicken lasagna, chicken and noodles, chicken and stuffing in the crock pot with green beans, potentially some brinner thrown in if I don't feel like cooking something

    Tuesday stuffed zucchini with the left over stuffing from the stuffed peppers

    Wednesday sausage pepper & onion

    I got a ton of peppers and very large zucchinis from a friend's garden, so I'm trying to use it all up before it goes bad. 

    Thursday will probably be an eat out night because we won't get home until 5:30 and the breastfeeding class starts at 7 so not much time.

    You're welcome any time! I come from a long line of farming families so I only know how to make too much food all the time, lol. :D The more the merrier!

     

     

     

  • Aw thanks, @Ivorytower2‌ ! Sorry I'm late getting back to you :) I keep a recipe binder with some of my favorites -- the salad is from Cooking Light magazine, the pasta skillet from Cook's Illustrated, the salmon burgers from a great easy/healthy cookbook called 6 O 'Clock Solutions, and the pizza is from my brain -- whole wheat crust, sauce (tomato or pesto) goat's cheese, artichoke hearts, zucchini, cherry tomatoes, basil and spinach. Yum!!
