Im trying to make a grocery list and i cant think of anything meal wise that we dont eat every week so lets see if you ladies can give me ideas. I know its only 2:30 but i have to make my list so i can go in a bit.
I do chicken enchiladas about every other week and they're very easy. I put a packet of taco seasoning, a cup of water and chicken (breast or strips work-frozen or thawed) and cook them in the crock pot while I'm at work. If they're frozen strips- 6 hours on low. If they're thawed strips, 4 hours. Frozen breasts- 8 hours on low, thawed- 6 hours. Anyways, when I get home I shred the chicken with 2 forks and then dice up an onion. I put shredded chicken, diced onion and shredded Mexican cheese in a tortilla and place that in a baking dish. Cover the enchilada's in enchilada sauce- (we love the trader joe's kind) and then put more cheese and onions over the top, cover with foil and bake at 350 for about 25 mins or until bubbly. It's a big hit at our house and pretty easy for me!
Other easy options: BLT's and mac and cheese
Brinner- I switch it up between homemade waffles, French toast or pancakes and then eggs and sometimes a meat.
Everything else I'm thinking of now, is probably pretty standard. Hope that helps!
I'm making pesto chicken with mozzarella cheese, angel hair pasta with pesto and garlic, and probably garlic bread. Yum!

Spaghetti bolognese tonight. Other nights include crab legs w/corn on the cob and potatoes; sheppards pie; turkey chili (WW recipe w/macaroni); baked chicken strips with asparagus and rice; pork loin ribs w/baked beans and rice.
We're having Qdoba tonight, b/c I'm lazy and tired.
But, we regularly have bbq chicken tacos (Stumps bbq sauce is really good) and I make a big salad with corn, black beans, and avocado. Another one that I've been making once a week is eggplant parm. I've gotten great eggplant at the farmers market - I cut it into slices, let it sweat on paper towels with salt for 10-15 minutes, bread the slices with egg and bread crumbs... put on an oiled baking sheet and bake for 10 minutes a side at 450. Then fry up some sausage (could leave out for vegetarian), mushrooms, garlic and onions, add pasta sauce. Once eggplant is done, layer in a baking dish - sauce, eggplant, sauce, add mozzerella and parm. cheese and bake until cheese is melted (10 minutes). Super yummy.
I'm making a pot of soup with kale that's getting droopy, white beans and a ton of veggies. Since I ate a bag of ritz chips for breakfast and lunch, I figure I better balance it out. But I'm not using a recipe, just winging it. We shall see.
