NCDR: Cookie Recipes

Thought this would be the place to ask.

Anyone have some good healthy (ish) cookie recipes? DH and I tend to snack and I want something we reach for that is semi-healthy. Some combos I haven't thought of. Stuff I can hide in. Please and thanks.

Or if you have some awfully good non healthy cookie recipes I'd try those too :)

I just like cookies.

  • Mmm cookies. I baked DHs grandmas peanut butter cookies this morning. So delicious but so not healthy.

    I'll see if I can find the recipe on Pinterest for these other cookies that are made from chickpeas and are supposedly delicious and healthy as far as cookies go.

  • I don't think I've ever had a cookie that was both healthy and yummy. How about pie? Not low in fat or sugar, but it's not worse than an average bowl of cereal. At least that's what I tell myself when we eat apple or pumpkin pie for breakfast! When I was pregnant, I couln't get enough of strawberries and Nutella. Mmmmm...

    PB cookies are the best ...  I add oats to help with supply. So that's healthy right?

  • I saw this awesome recipe once for almond cookies with raspberry jam in the center. They are gluten free, dairy free, and refined sugar free. And still freaking delicious! Anyone have the link to that one @Mapleme‌?

  • I have made oatmeal cookies with dried cranberries-so yummy! You can also add some white chocolate chips too :)

  • Oh I forgot I had a recipe somewhere with cranberries and white chocolate. Those were tasty.

    Those look yummy @mapleme I'm going to try them! I always forget maple syrup is a great sweetener. And I'm Canadian. ::hangs head::

    2 cups almonds

    2 cups rolled oats

    2 cups whole spelt flour or 1 cup whole wheat flour & 1 cup all purpose flour

    1/4 tsp salt

    1 cup maple syrup

    1 cup sunflower oil

    2 10 oz jars raspberry jam

     

    1) Preheat your oven to 350° F and line 3 cookie sheets with parchment paper or aluminum foil.

    2) In a food processor grind the almonds until they start to clump. Dump them into a large bowl. Then grind the oats until they are fine, but not yet a flour. Add them to the almonds.

    3) Add the whole spelt flour and salt to the almonds and mix until everything is evenly incorporated. Make a well in the center.

    4) Pour the maple syrup and sunflower oil into the well and mix until smooth.

    5) Make 1.5 inch balls with the dough and place about 1.5 inches apart on the prepared sheet pans. Press your thumb into each one to make a good size indentation. Fill each indentation with a small spoonful of jam.

    6) Bake for about 15-20 minutes at 350° F or until the cookies can be gently lifted off the pan without crumbling (use a spatula). If you used aluminum foil make sure to remove the cookies to a cooling rack while they’re still warm.

     

    Makes about 30 cookies

     

    Possible variations:

    Any Nut-Jam Combo: Switch our your favorite nut for the almonds and your favorite jam for the raspberry jam.

    Chocolate Brazil Nut Cookies: Replace the almonds with brazil nuts, drop the jam and add chocolate chips to the batter. Just flatten them a little instead of making the tumbprint.

    Lemon Coconut Cookies: Replace the almonds with 1.5 cups of shredded coconut (it doesn’t need any more grinding), drop the jam, and add 1 tsp lemon oil or the grated rind of one lemon to the liquid.z

  • I add milled flax to most any cookie. Brewers yeast is another I add a lot. Also for for some thing like chocolate chip, I add both the above and sub a cup of flour for a cup and a quater of oats.

  • I was never a fan of coconut as a kid ... you know those like macaroon style cookies ... HATED them

    I love coconut now though.

    Is it because of the CDs?
    Perhaps. Does he sweat a lot?
    Sometimes, it I just chalked it up to the summer heat though. Maybe that's why he stopped STTN too.

    Does he dislike nuts? Both my sister and I are meh about them because of the nuts. You could sub out coconut for the nuts.

    I don't think so, he eats PB, sometimes. I think he's had nutty granola bars too. I don't think we've ever given him straight up nuts. But he changes what he likes on a daily basis sometimes too.
