Tonight - ground beef keema
2 pounds ground lamb (or any other ground meat you have on hand)
2 small or 1 large onion diced
4 cloves garlic, minced
3 tsp garam masala
2 tsp salt
1.5 tsp cumin
1 tsp coriander
1 tsp chili powder
3 tbsp tomato paste
2 c broth
juice of 1 lemon
Raita or greek yogurt
In a large pot over medium heat, crumble the ground lamb until mostly cooked through. Drain cooked lamb to a colander, and reserve 2 tablespoons of fat. Saute onion and garlic in the reserved fat on medium until translucent, about 5 minutes. Stir in all the spices, and the tomato paste. Return the browned meat to the pan, and add broth and lemon juice. Reduce heat, and simmer for 10 to 15 minutes until liquid has evaporated. Toss in green peas if desired, and top with yogurt.
Typically you would serve this over basmati rice. I ate it in a bowl, chili style. Also it would be delicious served over zoodles, spaghetti squash, or even riced cauliflower. Also, it would make a delicious filler for an omelette, or served under a couple poached eggs.

Wednesday - brats and cabbage
We are having homemade pizza. I buy the dough from Wegmans and then just add the sauce, cheese and whatever toppings. Could use some new ideas for dinner too. I feel like with the new lo we have been eating out way more or even skipping dinner all together.
Last night, we had BLTs. Super easy and I never get tired of them! The rest of the week will be spicy sausages/hot dogs on the grill, quiche and latkes, meatloaf and cheesy potatoes, and a few things from the freezer (a chicken casserole my mom made and burritos and chile lime chicken burgers from Trader Joe's). I'm barely cooking these days!
Tonight I am broiling some salmon, rice on the side with some sauteed green beans. DH is out of town so it is just me and the kids. I tend to make fish when DH is traveling because he won't eat it if it's cooked, haha.
The rest of the week include pork tenderloin, a ham pasta casserole, maybe meatballs, and definitely some sort of chicken dish. I think I'll convince DH to make turkey chimichangas tonight--it's a weight watchers recipe, but sooo good. I don't have the link here, but it pops up if you google it.

@ghostof5letters, cheeseburger quiche sounds so good! So far I am stealing that and homemade pizza. I have a grill pizza pan from PC that I am obsessed with. Tonight is taco salad. Thanks for the help!

Leftover broasted chicken from Pizza Ranch with the sides.
Well, I had that for lunch, but that's what he is eating. I think I'll have sauteed veggies (eggplant/squash) from the garden and maybe some tuna. I'm lacking in the cooking department lately.

We are going out tonight. I scheduled an evening follow up u/s (to see the state of my uterus after my CS/messy fibroid removal and massive infection), so DH will be around to watch LO.
I put a roast with some red potatoes, carrots, celery, onions, and mushrooms in the crock pot this morning. My mom just left after 3 weeks, and she cooked for us every night so I'm just getting back in the swing of things. Relying heavily on my crock pot!
