So I love eggs benedicts but haven't had any because I like to make fresh hollandaise, which is pretty much raw egg egg yolks. I just found this awesome recipe for avocado hollandaise and made it this morning. It's pretty damn close, almost better! I did half the olive oil and a little melted butter instead....mmmmm butter! I have been eating poached eggs, but cooking them longer so the yolk is almost solid (if they're under that I still eat them

). This brings back all that creamy deliciousness of a really runny yolk! I might just make this instead of the real deal after pregnancy! So excited thought I would share:
