Hot weather dinner ideas?

Ugh it's hot and I don't feel like turning the stove on. What are your go-to (homemade) meals for a hot day?

  • I personally really like tomato and cucumber salad. You basically cut up both, removing all the seeds, then add oil, vinegar, salt, pepper, and garlic to taste. We put feta cheese on ours and everyone seems to really like it at family events. There is also a chilled pasta dish I make with spaghetti noodles, oil, pesto, garlic, Parmesan. Then add cherry tomatoes, some peppers, small onion, and any other veggies you might want. It can be made ahead of time.

  • If I don't feel like cooking at all, I'll grab a rotisserie chicken, salad, and rolls from the store. Otherwise, grill some sort of meat or hot dogs, corn on the cob, and fresh summer fruit. If you have time, Greek seasoned chicken in the crockpot in a pita with cucumbers, tomatoes, and feta.

  • DH likes to make BLT's and have that with chips. We also make burgers and hot dogs.

  • We grill a ton in the summer. Tonight we had steak and corn on the cob from the grill

  • Mm great suggestions, thanks guys! We ended up doing sausage from the farmers market with a nice salad and fresh local corn.


     

  • Pitas! You can stuff anything in them. Last week we made a chicken caeser salad and stuffed it into pita bread pockets. Yum :)

    I use both of these. I prefer the top one for stuffing in a pita or making gyros, but the bottom one has more flavor by itself. I'll usually serve it with a side of Greek salad.

  • We grill almost nightly in the summer since DH enjoys it so much. Also, crock pot meals and alot of summer salads with steak, chicken, etc. to help bulk it up a little bit! I am totally against turning on the oven in the summer!

  • Slow cooker everything. Pulled pork, pot roast, soups. Easy and no need to stand over a hot stove. Or like PP's have mentioned anything grilled.

  • DH grills a lot in the summer which saves me too much leaning over the stove. Otherwise I like to make things that will take minimal time on the stove, like large dinner salads with grilled chicken, or taco salad!

    As for sides, we always go to cucumber salads, carrot slaw, fruit salads - lots of salad in the summertime for us, lol! :D

    Annnnnnnnd now I have to go to the store.


    ETA: We do a lot of sandwhiches. BLTs, meatball subs, chicken salad, etc.
