Half-assing it this week since dh works nights today-Tuesday. Tonight I am going out with friends, but I'm gonna throw together a turkey and brown rice taco casserole for them. Figure I will have leftovers for lunches. I also bought spaghetti squash and more turkey to make meatballs, will throw that in the crockpot either tomorrow or Tuesday. That's as far as I got

I'm always trying to fine decent easy meals that hold relatively well since my husband never gets home for dinner and I hate eating at 8pm. Hopefully this fits the bill.

All of your meals sound amazing. I'm definitely slacking in the creativity department, as we're currently cleaning out our pantry and freezer. I only cook every other night since we usually have leftovers and DH is never home for dinner.
Tonight - Roasted tomatoes and chicken pasta
Tuesday - Cuban canoes (ground beef tacos using romaine lettuce as the wrap)
Thursday - I might try that parmesan crusted pork chop recipe that @jsgrl613 mentioned. If you happen to make it before then, can you let me know if it was good?

I'm trying to use up what's in the freezer and pantry so it looks like a lot of chicken is on the menu this week. Pretty much every day. I don't mind, but SO won't eat chicken for a month after this week so that will be fun.

OMG I need to do this. I need to get on the meal planning bandwagon but I get so lost and overwhelmed.

What keeps me from getting overwhelmed is picking meals with ingredients that can easily be turned into a few different meals. That way it's more about using up the ingredients I have for that week than sticking to a particular meal. I may have all the energy in the world one day and be super lazy/busy the next. Freezing a few easy to make family favorites helps too. It's a whole lot less pressure for me that way. It also makes it easier to shop sales.
I thought my parents and some friends were going to stay for dinner after the B'day party yesterday so I made a shit ton of BBQ Pulled Chicken. So that was lunch today and will be dinner tonight. It will be lunch for most of the week as well.
Other than that we will have this kielbasa dish tomorrow. We add red peppers. I have no idea the rest of the week.

Sunday: Lunch - Ham or turkey sandwiches, chips
Dinner- Pulled pork, baked beans, cornbread
Monday: Lunch - Pulled pork sandwiches
Dinner- Grilled fish, salad, cheddar biscuits
Tuesday: Lunch- Chicken caesar salad
Dinner- Broccoli and cheese soup. baked chicken
Wednesday: Lunch- Tuna Sandwiches
Dinner- Sloppy joe and homemade fries
Thursday: Lunch- Tuna or egg salad
