Diagnosed as glucose intolerant! Help!

Doing good up til this point, my glucose tolerance test came back elevated so I had to take the 3 hour test (only my 3 hour came back like 2 points elevated). They diagnosed it as a glucose intolerance and sent me to the diabetes place. I am now to moniter my glucose when I wake up in the morning and after each meal. I am finding it hard to plan meals where I am a vegetarian and my boyfriend is a meat eater. A lot of our normal dinners include a decent amount of carbs. I want to still be able to get enough protein as well where my little guy is growing a lot right now! Any suggestions, tips, anything?! My boyfriend thinks I need to eat meat but I've been a vegetarian for 17 years I feel like in my last 10 weeks til I'm due it would be a bad idea to try and introduce something like that, never mind try and choke it down. I just want what's best for baby!

  • Thank you all! I love beans, have yet to try quinoa but will give it a shot! Peanutbutter has been amazing and it doesn't seem to spike my blood sugar at all. I also love cheese so that's good, but can't get myself to eat eggs bc of the texture unless it's hidden in things. I'm hoping by eating small frequent meals like a little protein every 2 hours I'll be able to get enough and keep my blood sugar down.
  • Lentils are great too. I make a red lentil soup with lime that even my meat eating H enjoyed. Hummus is another good option. You can even mix hummus and quinoa together and pan fry them into little hummus patties. Top with a little avocado, tomato, sauteed onions and mushrooms and you're good to go. The same toppings are also great on a bunless veggie burger.
