NBR: go to dish to take to a BBQ

It's that time of year and we are getting invited to so many BBQ's and backyard parties. What's your go-to dish to share at such festivities??

I usually make a few batches of chocolate chip cookies...it seems no one can resist a chocolate chip cookie, plus they get warm and a little gooey in the summer heat. Yumm!

We also make a avocado couscous, it's really refreshing with the avocado, cucumbers and tomatoes and very easy to make!

Henry Cavill...You're welcome!

  • I cut up watermelon and cantaloupe into large flat (1/2 inch wide, 3 inch tall) triangles and cut off the peels.   Arrange nicely in a bowl and people can eat with their hands.  It is much better than just showing up with a melon.  If I can, I find some weird melon, like yellow or white watermelon or some unique melon--weird melon is always popular.  I also will make fruit salad with tropical fruits if I have more time.
  • Deviled eggs, watermelon cake, pasta salad. Those are my go to's.

  • A co-worker brought in a really good dish the other day. She diced up avocado, added some defrosted corn, crumbled feta, diced tomatoes and mixed it up with a little bit of lime juice and a tad bit of olive oil. We used tortilla chips to scoop. It was awesome!

This sounds like a variation of "Cowboy Caviar" which is what I often bring.  There are a gazillion recipes for this of varying levels of complexity.  The one I do is literally defrosted corn, black beans, and chopped green onions with a simple dressing.  You wouldn't believe how fast it gets eaten!

  • I make a corn salsa out of (you guessed it) frozen corn, black beans, red onion, a jalapeno, an orange bell pepper, tomato, cilantro, lime, salt, pepper, cumin, and garlic. Combine, and serve with chips. I could eat a bowl of this stuff.

  • @AshleyDehaven - it's too freaking hot here to cook, I might make your version of cowboy caviar/corn salsa for dinner tonight :).

  • @ReeceFamily - i have fluffed up some couscous and folded that mixture into it before to make it a meal and skip the chips. It's delish.

We had a party at work today and I brought potato salad. Everyone liked it. I mixed the potatoes with scallions, crumbled up bacon, salt and pepper and equal parts mayo and ranch.
