Favorite slow cooker recipes

I feel like we do this topic about about once a month but I'm working on planning more meals so I'm looking to stockpile some recipes. I'm looking for slow cooker recipes-- especially those that don't involve pork, mushrooms or heavy cream sauces. Extra points for simple! My two men have simple palates and I also suck at having tons of supplies for complicated meals on hand. If I have to go out and buy 20 things for a recipe, it will probably never happen!

    1 LB boneless skinless chicken breast
    1 16 oz can of crushed pineapple
    1 jar of green salsa

    I usually cook for 6 hours in the crock pot. It shreds nicely and is great for tacos!

  • Another one I like:

    1 lb boneless skinless chicken breast
    1 bottle of spicy bloody mary mix

    Cook for 6 hours :)

  • Italian beef is the easiest - 
    1 2lb roast (the cheap kind)
    2 packets of dry italian dressing
    2 cups of water (a little more if you will cook longer)

    Cook on low for 8 hours.

    I also use it for chicken tortilla soup but you can do this is in a soup pot quickly too - 
    1 box chicken broth
    1 large can chicken (like the tuna can kind)
    1 can drained black beans
    1 can drained corn
    1 jar salsa (I like the roasted chipotle kind from trader joes)
    optional - 1 jar of water if you want more/lighter broth)
    top with tortilla chips, avocado, cheese, and sour cream
    How long does the soup cook?

    what kind of green salsa do you use?  This sounds amazing!
    @sandandssea I get the Trader Joe's green salsa but I think you could probably use any!

  • @jellybean529. Do you drain the pineapple or leave the juice in it? I'm making this for dinner tomorrow!!!
    @sandandssea leave the juice in :) the chicken will soak it up. yummy!! Enjoy!
