Monday: dinner alone so probably tuna salad. I'll also make gluten free cherry pie to have on Tuesday

Thursday: almond crusted chicken with spaghetti squash and tomatoes and mushrooms with salad

@mplemont - If you like crockpot cooking I have a recipe for orange chicken as well as Root Beer BBQ chicken. With all the good recipes everyone posts on here, we should publish our own cookbook!
@skategirl128 For the soup I don't really have a recipe, I mostly wing it each time. I basically just toss 4-6 cups of broth or stock together with cooked chicken breast, onion, salt, pepper, garlic, oregano, carrots, and celery into a large pot. Sometimes I use ground chicken instead and cook it directly in the soup. Depends on my mood. Then I use a biscuit recipe for the dumplings. Once the soup is cooked, I drop balls of the dough in for about 10 minutes. Sometimes I just bake them into biscuits though and put the cooked biscuits at the bottom of my serving bowl with the soup on top. Again, depends on the mood and what texture I want. My biscuit recipe is : 2 1/2 cups ap gluten free flour blend. I use Jule's 1 Tbsp baking power 1/2 tsp salt 1/4 tsp baking soda 6 tbsp melted butter 1 tbsp apple cider vinegar 3/4 cup milk, dairy or otherwise. I use coconut milk 1 egg
Combine wet and dry ingredients separately, then mix them together. If you bake them, bake at 425 for 12-15 minutes.
Alternatively if I'm going the biscuit route, I'll sometimes use this recipe. It's pretty yummy and I want to try it as dumplings at some point.
