So what are you making this week? I love reading what everyone is making.
I had a couple rough weeks with meal planning as our refrigerator died and we were working out of two mini beverage fridges for 12 days. The refrigerator we wanted/needed due to space restrictions (counter on one side, cabinets on the other and above and an island in the kitchen) wasn't available for immediate delivery.
Monday - teriyaki pork chops, lo mien noodles & veggies Tuesday - kielbasas dogs, sweet potato FF, corn & zucchini pancakes Wednesday - chicken picatta, broccoli and pasta Thursday - ham loaf with roasted carrots & red skin potatoes and cucumber salad Friday - chicken parm or marsals, pasta and salad Saturday - DH is in a golf scramble so LO and I will be at my moms Sunday - Steaks, salad, corn and a starch
I rocked out this week - once I learned that the weather was going to be so swamp-like (hot and humid) I knew I didn't want to turn the oven on AT ALL, so it's crock pot and grill, FTW! Sunday afternoon I made a big bowl of pasta salad, I cooked chicken breasts in salsa and shredded it and put in the fridge, and prepped a flank steak for mongolian beef in the crock pot - it was awesome to have dinner ready to go last night after work and this morning just put stuff in the crock for tonight .
I am working from home on Fridays for the remainder of my pregnancy, so I am hoping to start doing my meal planning, prepping, and shopping on Fridays when it is quieter in the stores, and then have the whole weekend free. ;-)
Sunday: burgers, potato salad, asparagus
Monday: shredded chicken tacos
Tuesday: crock pot mongolian beef, white rice, pot stickers
Wednesday: Ribs, pasta salad, sauteed sugar snap peas
Thursday: we usually eat at the track for buck night!
Another 4 hour crock pot recipe! @jss1002 how do you handle that when you are at work? I'm out of the house for 11 hours.
I didn't actually even realize it was 4 hours. I left at 730 and won't be home until 5. It is set on low for 10 hours at which point it switches to warm. I put the beef in froZen and rarely follow the cooking time!
