Help with menu

We are having a few families over on Saturday for DH's birthday.  More of an excuse to get together than anything.  We are having a sale that day until noon so I wanted it to be something easy.  I decided to throw some pulled pork in the crock pot.
I have stuff for sandwiches and have thought of making the following for sides.  Which would you choose?

Baked Beans
Pasta Salad
Macaroni & Cheese
Cheesy Potatoes
Corn on the Cob
Cornbread (We will also have buns.)

Any ideas on dessert?   DH doesn't like cake.  Any summery cheesecake recipes?

  • I vote pasta salad and corn on the cob (b/c those sound the easiest....at least you can make the pasta salad ahead of time and chill it....and I don't like baked beans, heheh). I'd also vote for a fruit salad and/or veggies and dip.

    Dessert ideas.....
    Brownies (I had a friend once who hated cake but would have "birthday brownies" every year....she almost had wedding brownies too until her mom talked her into getting a cake)
    Ice cream cake
    Strawberry shortcake
    Sundae or yogurt parfait bar

    Thanks for reminding me!  I had thought I would get a watermelon.  Maybe some berries too.

  • I second the corn on the cob. For the second side, I'd do either the beans or the pasta salad, depending on which was easiest for you to prepare. Personally, I might throw a veg in there (a simple salad or even just baby carrots) because I know that I don't eat enough good veggies so I always try to have one per meal. To me, corn is more of a grain than a veg. 

    Dessert is my favorite part of the meal! Another summer-y option is berries served with cream and sugar (on the side so people can decide what they like). I also like the ice cream cake idea if you're low on time. 
  • I vote mac 'n cheese and corn on the cob!

    For dessert:
    Banana pudding
    Fruit crisp or cobbler
    No-bake cherry cream cheese pie
    Cookie bars or brownies
    Angelfood cake with macerated berries and whipped cream

    We're having a bday party on sat too. The menu is burgers n hot dogs, ribs, corn on cob, cornbread, Mac n cheese , baked beans, salad. We are having ice cream cake for dessert. I would love to have a peach cobbler with ice cream too since it's peach season.
  • I was thinking coleslaw, but I love that on pulled pork. Also watermelon yum!
