NTTGPR: Quick and Healthy Meal Ideas

I am starting a new job next week where I'll be working in the same town in which I live.  While this sounds like a common occurrence to most, I have not done this for the last 8 years of my life.  I've spent the last 8 years traveling both the US and the globe, so it's now time to settle down. 

I am very active, with mornings being my most active part of the day in which I either run or bike.  I'm hoping that you ladies have some quick and healthy meal ideas that I can incorporate into the work week without spending too much time prepping in the kitchen. 

This morning I tried paleo egg and bacon muffins, except I substituted prosciutto for bacon, here's my recipe:

Ingredients:
4 eggs beaten (with 2 tsp of milk - optional)
6 pieces of prosciutto
1/2 bell pepper (finely chopped)
1/2 onion (finely chopped)
Pinch of garlic powder, turmeric and fresh ground pepper

Instructions:
Preheat oven at 375
Line each muffin tin with a piece of prosciutto
Combine eggs (with or without milk), bell pepper, onion, garlic powder, turmeric and fresh ground pepper in a bowl
Pour egg mix into muffin tin
Bake until eggs are set (25 minutes on my gas oven)

A former colleague of mine makes these with cheese sprinkled on top, I do not because I am allergic to cheese.  I also topped them with a little bit of salsa when I ate them. 

I was happy that 4 eggs yielded 6 little "muffins," so now I have breakfast for tomorrow morning.  YAY!

  • I eat paleo 98% of the time. Quick easy lunches I do are:
    Spaghetti squash and meat sauce
    Sausage peppers and onions
    Salad w meat and nuts on it
    Grilled chicken and veggies

  • One of my favorite summer quick meals is cajun tilapia with pineapple salsa.

    Sprinkle tilapia fillets with a mix of cajun seasoning, salt, and red pepper flakes.  Cook in nonstick pan with a smidge of oil.

    While fish is cooking, chop up a pineapple, some onion, tomato, jalapeño and cilantro.  I do about a cup of pineapple with maybe 1/8 cup each of the onion and tomato, and just eyeball the cilantro and jalapeño.  Add about a TBS of rice wine vinegar and mix well.  

    Serve over/with the fish.

    Nom nom.  Super quick in that if you're quick with a knife you can have it all done in the amount of time it takes to cook the fish.  And pretty healthy too!

    This sounds so amazing, I love pineapple! I'll be trying this out tomorrow, thanks for sharing.

  • We love to grill fish or chicken, grill green beans they come out amazing and also occasionally wrap them in turkey bacon and grill. Followed by steaming some sweet potatoe and adding in cinnamon and some plant based butter. I know it's not creative but it's amazing every time!

    This does sound amazing!  I will try that out for tomorrow's dinner. I'm too lazy to cook tonight!
