Causes of fluctuating supply?

I battled OS/OALD for the first 8 weeks. Through block feeding I felt I had things under control. For the past week (LO is 10.5 weeks), my supply is all over the map. One day I barely have enough, and other days I am right back to where I was, still full after he nurses on one side. It doesn't seem like his intake has radically changed, and I'm not under any particular stress and haven't gotten my period. Any ideas? I'm also doing a diet trial for occult blood and mucus in poop, but it's impossible to tell what's working (or not) when my supply is like this...

    What do you mean you "barely have enough"?  It's normal for breasts to not feel full at all anymore as your supply adjusts. 

    He goes from nursing one side to draining both sides and wanting more (nurses for 20+ minutes instead of 5-10 and tugs at nipples). Once his urine output decreased noticeably.
