Inside the fertile window (6-7 days) does it hinder your chances of getting pregnant by doing it every day? I've read every other day is best but I don't want to miss our chance!

Yep. Unless you have MFI every day shouldn't be an issue.

Except you can't really guarantee your FW, so you could be trying to have ED sex for a long time.

I got pg on the only cycle we did it ED...the couple other cycles where I actually ovulated and we did it EOD were BFN. That being said I don't know if it really made a difference or we just got lucky.

You got lucky. You only need one sperm out of the plethora that come out to become pregnant. That one sperm can and does come from one session of sex. That's it.
Do it every day, do it every other day, whatever... you're still throwing a 100,000 sperm at your egg and only one will eventually get the job done.
