Healthy lunches

I'm really going for this weight loss. I would be happy with 40, but looking more to 50.

Thanks to @CTGirl30‌ I have lots of breakfast options that are easy to bring to work.

For lunch I try to bring leftovers, but I don't always have them and I end up buying at our cafeteria which is not good for my waist or wallet.

What do you take for lunch? I have a microwave, fridge , and toaster. Bonus if they are filling because I always feel hungry.

I'm on spark people looking at some soups that may be good as I have time to cook on the weekends in bulk.

Tl;dr: I'm always hungry and need to lose weight help :)

  • I always make sure that I have a pouch of tuna or a can.  I also keep boil-in-bag pasta that you can stick in the micro for three mins in a bowl of water.

  • If I don't have leftovers I'll sometimes bring a sweet potato to "bake" in the microwave. I pair that with a half Caesar salad from the Target deli ($2.50) and it fills me up. Or I'll bring in a bagged salad to keep in the fridge (I also have a bottle of vinaigrette here) and that lasts me a few days. I'll either have that with the sweet potato or I'll bring soup.

  • I usually either remake salads for DH and I the night before (always greens and chicken breast, then I add in various things, like hard boiled eggs, cheese, veggies, beans, etc.), or, I am a huge fan of making big pots of soup or turkey chili and rationing it out and freezing individual portions. Sometimes on a Sunday I will bake a bunch of chicken breasts, roast some sweet potatoes, and sautee up some kale and make a few lunches like that.

  • I like spinach wraps, usually with turkey, sometimes not. I use whole wheat tortillas and spread with hummus, fill with baby spinach and turkey, red onions, cucumbers, whatever veggies we have.

    I bring a lot of salads too, basically just the deconstructed wrap with actual dressing instead of the hummus.

    Bringing snacks have helped me the most though, I love the single serving cottage cheeses with some fruit or some nuts. Or yogurt with granola.

    Boom. I thought they discontinued it until I figured out the name.

    I have one of these but was not aware that I could cook chicken in the microwave with it.... How do you do this?!

  • Sometimes I will take a veggie burger with a bun or a portableeo burger with avacado. I often make egg salad in the morning.m I boil two eggs while the kids are eating breakfast,mash it up and add some mayo (you can do fat free if u want). I like the egg salad with whole wheat crackers. I also keep cans of Wolgang Puck's Organic Soups (in the winter I make and freeze soups). I like the veggie barley one. Oh... And cheese quesadilla! Wraps and mexican blend cheese. Quick and easy. Great with some salsa or avacado. I usually take leftovers, but these are my options if there are no leftovers

  • Lots of good ideas in this thread.  My favorite thing is turkey chili or some kind of soup that I can take for several days.  If I do salad, it has to have egg or chicken to be at all filling.   I have also been known to whip out a half of a spaghetti squash and top it with marinated tomatoes and garlic.  

    I'm like you--always hungry.  For me, it matters less what I pack for lunch and more what I bring as snacks.  If I don't pack some fruit, almonds, a cheese stick, etc., I set myself up to eat everything when I get home before dinner.  I need at least one snack before lunch and two for after.  One for mid afternoon, and one for the drive home so that I have control at dinner time.
  • I take in a big thing of Spring mix salad, blue cheese crumbles, craisins, almonds and chicken or something for more protien. It's actually pretty yummy and I look forward to it. I also bring a fruit or yogurt to eat with it.

  • I buy produce at BJs a lot in huge quantities, so I make up double batches of things. Eat 1 with the family for dinner, then freeze the 2nd in single portion sizes.
