Chicken breast, crockpot...?

My dad is watching the kids tonight so DH and I can go out for our anniversary (yay)! He doesn't cook, so I thought maybe I could make a simple meal ahead of time.

I have boneless/skinless chicken breasts in the fridge, but I've never made a crockpot meal with them. I only use the crockpot for like three recipes, so I am a little unsure what to make...also, the kids are fairly picky.

Thoughts...? Maybe something that can be served with pasta?

  • Shred it up and season it for either pulled BBQ sliders or chicken tacos, if your kids will eat either of those.
  • Loading the player...
  • Throw in a can of cream of chicken soup and a packet of dry Ranch seasoning mix. So good!

  • I put the chicken in water with spices (I use onion and garlic powder, pepper, etc). I cook on high for 3hrs and then shred.

    I used that chicken for chicken pasta, enchiladas, or basically any other recipe that calls for chicken. It's an easy way to sneak it in so DD will eat it.

  • Happy Anniversary! How many years? Today is our 8th wedding anniversary!

    As far as chicken breasts in the crockpot, I do a bunch of things (or at least I used to until my kids stopped eating anything with the components mixed together). One of my easiest is 4 lbs of chicken, squeeze 2-3 lemons in, put several sprigs of fresh rosemary and leave it for a few hours. Serve over brown rice. Tasty, very healthy and ridiculously easy! Or you can throw chicken and a jar of salsa. Some people throw in a square of cream cheese at the end, but I prefer it without that.

    Im pretty sure my very classy neighbor dumpster dives! The other night they were taking big bags of bottles and cans out of his car at 3am. There are always bags of stuff in his carport (why the hoa does nothing, idk). Plus I heard his baby mama yelling that he didn't have a job and was a deadbeat. He told her that he gives her money, that's all that matters. I would feel bad for him if he wasn't letting the two toddlers play in the street (he's out there) without shoes during the day when there is a common grassy area one house over.

    I feel so bad for those kids but it doesn't seem neglectful just like he's making poor parenting choices.

    Google copycat Chipotle cilantro lime rice. Super easy, healthy, and delicious!
