Veggie mom lunch ideas for eating in the car

Hi all,

I eat in my car while driving, and I'm running out of ideas for vegetarian lunch ideas that don't require a fork or a microwave. I have had so many pita and hummus and PB sandwiches over the past few years that I wouldn't mind if I didn't eat another one for a very long time...

  • Can you pack a salad in a cooler?  That are a gazillion ways to change up a salad.

  • Maybe a calzone on wheat crust or herb crust? You can add veggies and cheese. Easy to eat and if you make a big one it freezes well!

  • When I have to eat breakfast in the car (rushing to meeting, I don't like to eat at 5:30 or 6 a.m.), I usually make a protein shake. My go to is spinach, peanut butter or almond butter, a banana, protein powder, and water and ice.

  • Cut up fruit, cheese and crackers, bagel and cream cheese, the soup idea is a good one there are a ton of different kinds that you can make, cheese pizza (you can eat it cold),  smoothie, veggie muffins (like carrot, zuccini or apple---you can make mini muffins so they are easy to eat), milk and your favorite cereal (drink the milk while you eat the dry cereal), hard boiled eggs.
