We haven't had a WFDW in a while, so I thought I would see what everyone's been cooking up this week!

    I think we will do breakfast for dinner tonight... Spinach omelets and skillet potatoes.

    QOTW: I love a spinach salad with strawberries, blueberries, feta cheese and walnuts in the summer. With a little raspberry vinaigrette dressing - yum!

  • Well... We may be eating out tonight if the A/C repair person can't get out to our house tonight. The A/C stopped cooling last night and we cooked dinner for last night and lunch for today, which made the house extra hot and all three of us extra cranky. Not doing that two nights in a row!

    I did make these lentil tacos (with a few modifications) earlier in the week, which were pretty tasty (https://ohsheglows.com/2014/06/17/ultimate-green-taco-wraps-with-lentil-walnut-taco-meat-vegan-gluten-free/).

    Last night we ate a roasted/grilled vegetable salad with seasoned chickpeas. Oh-my-yum. I've been roasting or grilling a lot if the veggies we have been getting from our CSA and combining with raw veggies and a veggie protein to make huge salads and they have been so good. Last night's salad had grilled eggplant, roasted potatoes, fresh vine and cherry tomatoes, cucumber, avocado, and seasoned chickpeas w/ this yummy vinagerette (Bobby Flay recipe) - so easy and so good:

    1/4 cup red wine vinegar
    1 tablespoon honey
    1 tablespoon mustard
    1/2 cup olive oil
    Kosher salt and freshly ground black pepper

  • @ATX Mommas - thanks for the great recipes.

    I think we'll have falafel's, hummus and tabouli for dinner tonight. I also have artichokes I want to cook, so maybe a couple of those as well (with yummy butter). 
  • We have our childbirth ed classes on Wednesday nights in a neighborhood across town, so we have been exploring the restaurants there before class and it's been really fun to have a date night in a place that practically feels like a different city! Seattle neighborhoods are SO diverse and different feeling. Tonight is Bar del Corso! Though with the GD, I will have to just have a little pizza and eat small (non-carby) plates otherwise. Still, excited!

    QOTW: OMG, my favorite thing is so simple - crab, avocado and preserved lemon salad on greens. It's so easy - 1/2 c. crab meat, 1/2 c. (or more) avocado, 1 tsp. tiny diced preserved lemon on top of your favorite salad greens lightly tossed with olive oil, salt and if you want a little vinegar. J just asked "when are we having crab avocado salad?" the other day, so it's on my list for this week!


    Lil'mamaz was born on Aug 21, 2014! She's PERFECT!

    Little S was born on 8/21/14 - 8lb, 14 oz and 20 inches long.
    We live in Seattle and used SRM for our donor egg IVF cycle

    I have no idea what I'll do for dinner tonight. L is out tonight. It is super hot here (feels like 102) and we are supposed to get severe storms about the time I pick up the kids from camp - so we'll see. I've thought about just eating in the cafe at the gym....quick, easy, and cheap. If we go home, it will be fast kid food (mac and cheese with leftover chicken, peas, and strawberries.)

    QOTD: I need to find a good dressing I like. But I love a salad with fruits and candied nuts.

    You’re jealous… I know. :P

    As for summer salad; I just love the staples.... My Dad’s homemade tuna macaroni salad and potato salad.  I know they are not the leafy green salads, but they were the best, and always reminded me of summer.

    Aww, Z and I did the same thing before our child birth class (was a 6-week class during the week).  It was definitely a lot of fun to have some mini-dates before baby. :)

    QOTW: Really basic side: Lettuce, s'corn, peppers (at least two colours) and cheese - sometimes we throw in some home made croutons. Funnily enough, I've never liked dressing on salad.

  • We are having beef and pepper kabobs, marinated in Italian dressing and stuffed banana peppers.

    QOTW:  I love spinach salad with walnuts and several combinations of fruit...strawberries, mandarin oranges, raspberries, blackberries.  I add some feta cheese and my Mom's homemade vinaigrette.

    We've been working on baby #1 since July 2013 using Open ID donor sperm.  8 IUI attempts with 5 actual IUIs and one chemical pregnancy.  We have one fresh IVF cycle under our belts as well as a FET.  I have endometriosis and a uterine septum that was corrected via surgery in November 2013. 

    11/14/14 -  Second HSG shows that tubes are still clear and ute is looking good. 

    12/6/14 - Started BCPs in prep for IVF #2

    12/22/14 - Saline u/s and endometrial scratch (All was clear and OUCH!)

    1/2/15 - Began stimming for IVF #2

  • Everyone here eats so healthy! I made chicken Alfredo for dinner and it was actually really good. I'm excited for Friday though because we get to binge eat on some fair food (;

    Ha. When I picked up the kids from camp, they were an exhausted, sweaty (the a/c on the field trip bus broke down and the heat index was 102 yesterday), starving mess. Rather than driving the 30m back home and then spending 30m making dinner, I took them (and me!) for burgers. I left the restaurant with much happier kids. :)
