easy recipes?

Anyone have any easy recipes they want to share? Making dinner is my least favorite thing right now. My kitchen is so hot, the heat and humidity kills me! The faster and easier the better. I'm in a rut with cooking…

    If you have a slow cooker, here's a good one:

    Combine 2 frozen chicken breasts, a can of diced tomatoes, and a packet of taco seasoning in your slow cooker. Cook on low for 6-8 hours. Boom, chicken soft taco filling. Serve in tortillas with delicious toppings of your choice.

    For variation, you can use fajita seasoning or enchilada sauce mix in place of the taco seasoning.

    We grill a lot.  No heating the kitchen/house at all and pretty easy, nothing fancy.

    Grilled chicken on a ceasar salad.

    Grilled steak and corn, maybe a side salad.

    Grilled fish/shrimp and veggies.

    I will grill a bunch of veggies at once and make something similar to this, which is also great for lunches.

    Ooh also, get mac salad, potato salad, beans...all those summer goodies that are easy to pair with anything.

    I'm making this tonight and I'm not sure what could be easier!  We'll eat some and freeze the rest for August.

    My husband's favorite that I make is the easiest recipe I have.

    No Peak Chicken
    3 or 4 boneless, skinless chicken breasts (frozen)
    1 package Uncle Bens long grain wild rice with seasonings
    1 can cream of chicken soup
    1 can cream of celery soup
    1 can of water
    1 package dry Lipton onion soup

    In a 9X13 pan, mix the rice, seasonings, soups, and can of water. Stir until well mixed. Place the chicken breasts on top of the rice mixture. Spread the package of dry onion soup over the whole thing. Cover and cook for 2 hours at 350 degrees.


    It's delicious and SO SIMPLE!
