crock pot/slow cooker recipes

So by the time dinner time rolls around I am so tired I don't have it in me to stand and make dinner.  My DH & DD have been fending for themselves for a couple weeks now.  I was thinking maybe if I made more crock pot meals, at least until I get out of first tri, it would be easier.  I use my crock pot maybe once a week and make different chuck roast recipes: BBQ roast sandwiches, french dip, regular old roast and potatoes.  Anyone else have easy and yummy crock pot recipes you want to share?  I need inspiration!

  • I did a chicken & gravy and everyone loved it.  It was just two packets of dry gravy mix, 1 C water, 1 Can Cream of Chicken and  4 chicken breasts- on Low for 6-8 hours.  Last 15 minutes- Shred the chicken and add 1/2 C sour cream.  Great over rice!

  • One of my favorites is you take sliced potatoes, sliced ham, shredded cheddar cheese and cream of mushroom soup and layer them in that order in the crock pot, usually I do about two or three layers then put some more cheese on the top. Cook on low for 8 hours, it is creamy and awesome. I usually serve it with green beans and salad.

  • This is my go-to Crock Pot meal.  I have a lot of different ones, but this is insanely easy and insanely delicious.  I usually serve it over rice or quinoa or sometimes we'll have it in tortillas with taco fixins.

The Crockin' Girls website also has a lot of really good and pretty easy recipes.  I've gotten several from their site and their cookbook.

  • Put six frozen boneless, skinless chicken breasts in. Add a pack of taco seasoning. Add a jar of your favorite salsa. Cook on low for six hours. Shred chicken. Cook for another hour. Serve as tacos, enchiladas, nachos, whatever. Delicious! I've also done this as a chuck roast. Soooooo yummy!

I experimented the other day with this one and it was a hit with my boys. My six year old suggested I go on Hell's Kitchen ;-) A can of cream of mushroom soup spread across the bottom of the crock. Put in eight boneless pork chops. Add another can of cream of mushroom soup on top. Cook on low for eight hours. Remove pork from juice. Whisk in flour to desired thickness and add salt and pepper to taste. Serve over pork and rice.

Easy recipe I put together last night for healthy cafe rio chicken, it's delicious and once made you can put it on burrito shell, or use it on many things (you can freeze these so you can use them later and make multiple) take a large freezer bag, put two large chicken breast, 1/3 of bottle of Italian dressing (generally used for salad), 1 tablespoon chile powder, 1 tablespoon cumin powder.. No need to shake and mix up, if you want to have it that night and don't want to make any to put in freezer for future nights than just put if directly on crockpot on high until chicken is cooked, pull it off bone, take it out, let stay on low

  • I do this a lot. It's about $175 to buy everything but usually we have enough leftovers to feed 2 meals. It's about 40 dinners for my family of 4.
