How to use up hummus?

So I'm still learning what to buy in bulk and what not to -

I bought a giant container of hummus, and now I need to use it up before it goes bad.

I might make burritos out of it? I'm trying to think of something that is not just eating it plain and not a dip because I don't want to be eating a lot of chips with it. Do you have any good recipes or ideas? I probably have 1.5 - 2 cups to use.

I believe you can freeze hummus as well.

I love it with carrots and triscuit crackers.

Flatten a piece of bread with a rolling pin. Put the hummus on it. Add shredded carrot. Then roll it up and slice it like a roll.

I saw it in Parent magazine. They called it sandwich sushi or something like that.
