    Wow, I am impressed that you can get your LO to eat fish! I can barely get mine to eat, period, lately. Sadly, lunch around here is usually grapes, cheese, yogurt, etc. she used to be a great eater, but no more. I am pulling my hair out!

  • We do a lot of left overs as well. When I'm in a pinch though I just do roll ups, ham& cheese or bologna & cheese with some type of berry. We do pasta quick too, mixed with broccoli and grated cheese. Pb&j as well, on crackers with some grapes and cucumbers. I'll be following this post because I'm out of ideas as well. Dd loves her chicken nuggets so I need other ideas, she's not to big on meat or veggies.

    PB & J is a huge favorite here & I switch it up my using different jellies- apricot, jelly, etc. But my most favorite thing to do is use cookie cutters to make shapes or I do a whole plate design. Its just as fun for me to make as the kids to eat!!

  • OP, you're making me hungry! That sounds like a great lunch, and a lot more time than I usually spend on lunch. 

    If we're out of leftovers, the fastest lunch I make tends to be a nut/seed butter sandwich (peanut butter, sunflower seed butter, or almond butter) and a banana. 

    My LO also likes a low-sodium lentil vegetable soup that I buy at the supermarket, so that's pretty quick, too. I try not to do that too often, though, since even the low sodium soup is a bit high in the salt department. 

    Sometimes I'll make scrambled eggs with some shredded cheese thrown in for LO for lunch, especially if we were carb heavy the day before (ex. pasta for dinner). I'll nuke some frozen green beans or broccoli, and voila! Protein and veg. 
  • For sides we use fruit squeezes, mandarin oranges, cut grapes, apples, soft carrots, and other fruits/veg. For the main stuff we use deli meat, cheese, baked chicken/nuggets, pasta, and sometimes soup. 

    I have seen some cool quiches, muffins, and other toddler foods on pinterest but I haven't had time to try them out yet.

  • DD isn't a fan of sandwiches yet for some reason, so we almost always send leftovers, a banana or some other fruit, and some sort of carb (bread, graham cracker, etc). She also gets "milk" at school.

    For days when we don't plan well for leftovers, we will do a handful of pasta with a little jarred pasta sauce, frozen ravioli (which she likes plain), turkey burger (also plain), or a couple chicken nuggets as the "main course" and then will add in fruits or veggies that we have. We also still have fruit and veggie pouches that we'll sometimes toss in if we don't have fresh ones.

  • Some of these ideas are great! For lunch or dinner!

    We're a "snacking" family so everyone just sort of grazes their way through the day. When we do sit down for lunch Killian loves pb&j as long as he can pick up the sandwich half & get as messy as he wants, cheese cubes or greek yogurt for protein, fresh fruit chunks (or fruit/veggie pouches) and his "juice" (1/4 juice, 3/4 water w/ ice cubes - the kid loves ice cubes in his drinks)

  • My go to is avocado, berries, cheese, pasta with marinara, and Mac n cheese. I don't buy the Mac n cheese with artificial junk, usually horizon or Annie's.

    Today she had a bagel, avocado, yogurt, and grapes. Then she found some of DSs candy and hid with it.

  • We do a lot of tomato paste spread on a piece of bread with cheese that I stick under the grill for a few minutes for 'pizza bread'.  Besides that, we do wraps, sandwiches, tortellini without sauce or fish sticks.  He does primarily eat leftovers though.

  • I was in a pinch for dinner tonight and did a cheese quesadilla with chopped up broccoli and chicken in it. He hasn't been eating as well as he used to so I was pleasantly surprised when he devoured it. It didn't take long at all, maybe 25 minutes (I'm a very slow, unorganized cook so maybe even less). You just have to cook whatever you choose to put in it and then it takes about 3 minutes on each side, low/medium heat in a pan, for the cheese to melt and the tortilla to get slightly crunchy.
