Paleo moms

How are you doing with food?

I usually eat primal, with "safe cheats" of rice and quinoa. I even did pretty good when I was pregnant with DS, I cheated a little more than normal, but still ate mostly primal.

But this time around, it's been totally out the window. Not because of any nausea or food aversions, just because I've been tired/lazy. Chasing a toddler makes it harder to cook anyway, and adding on pregnancy tiredness... Well, there's been a lot of pizza, pasta, and sandwiches lately.

If you've been doing well, what have been your go-to quick-&-easy recipes during pregnancy?

I've been pretty lazy when it comes to cooking. I buy a rotisserie chicken about once a week and it lasts me for a few dinners and lunches. I'll have it with rice and veggies, or usually on top of salad for lunch at work. I make sure to get a lot of good fat, olive oil, avocado, olives to help me stay full. I also buy canned tuna or chicken as make a quick chicken salad with chopped celery. Nothing fancy, but I feel better. I just bought some lunch meat. I have eggs and sausage and avocado pretty much every day for breakfast. For a quick meal that I can freeze leftovers I make Italian sausage and mushrooms in sauce. Sorry, no amazing recipes here lol, but I'm just happy I'm about 75% paleo again after several bad weeks in the first tri.
Is canned okay? People have me terrified of BPA. I love those little flavored packets of tuna though, especially the ranch flavor... maybe not paleo though?

  • Just wanted to say that I'm impressed with anyone that can stick to a paleo diet, especially being pregnant when you don't have the energy to plan and cook all these foods. I love processed sugar too much to give it up, annnnd I'm probably going to make sprinkle rolled sugar cookies when I get home.

  • I have been failing pretty hard at Paleo/Primal the past 18 weeks. I am finally a little bit back in the swing of things, and did some mostly primal grocery shopping Sunday. I decided to do primal over paleo because it is so much easier to do Greek Yogurt for breakfast, and I know throwing some cheese on a salad just makes my life so much more enjoyable.

I do a lot of Aidell's or Trader Joe's chicken sausages because they take about a minute to heat up for those times I just won't/can't cook. I also bought stuff for taco salad for tonight, so I will only need to cook some ground beef and throw salsa, sour cream, cheese, and black beans on. I know black beans are a primal no-go, but I figure it is way better than eating a sandwich or any number of things I could be eating.

I am having a really hard time with eggs, and the only way they are semi edible to me right now is in a frittata. I take about a dozen eggs, whip them up with cooked chicken, cilantro, green onions, and equal parts Frank's Red Hot sauce and coconut oil, throw in the oven and I have a buffalo type of frittata. Cheap, easy, and will supply me with several days of breakfast.

Another easy meal I do is the fried sardine salad in Well Fed 2. Takes all of maybe 8 minutes to do (after marinating the sardines for 30 mins), and it is sooo delicious. You basically marinate a can of sardines with olive oil in garlic, lemon juice, and parsley. You then roll it in a little tapioca flour and spices and pan fry them. You eat the sardines over a bed of lettuce and the left over marinade is used as dressing. I know sardines are jam packed with all the Omega fat goodess, but I can't eat them out of the can. This recipe sounds gross, but is a great way to actually enjoy the sardines.

Also, the Wild Planet tuna is supposedly lower in mercury than other tuna, so when I can afford it, I eat that. I am far too lazy to worry about making mayo, so I have just been using the horrible jar stuff for my tuna salad.

My approach is that I am just trying to not be to hard on myself. I am making a really good effort, and I figure if I shortcut some things (mayo, black beans, etc) I am still way better off than eating fast food all the time.
