I don't hide vegetables - my kid thinks spinach is a normal part of smoothies, because he sees me put them in his.
I think a really helpful thing is to eat veggies yourself. We don't force my son to eat vegetables, and sometimes he doesn't. But usually if he sees DH and I enjoying something, he wants it too (today he wanted to eat all the broccoli out of my pasta, and he hasn't been into broccoli for a while)
I throw veggies in soups, eggs, pasta, stirfries, chili, and salads.
I grind tons of veggies in my food processor and put them in lots of things. Some people seem to have an issue with this, but I did it before kids to lighten up my meat recipes, stretch my meals, and it makes it cheaper. We do also serve veggies in their 'whole' form.
Pretty much anytime I use ground meat I add veggies. Green pepper, onion, and carrots in spaghetti sauce. Red pepper, carrots and zucchini in meat loaf or sloppy joes. Spinach in meatballs. I also add frozen veggies to mac n cheese or soup (also cools it down quickly). Also both my kids love frozen veggies still frozen. Just last night they asked for a bowl of mixed veggies as a snack.
I make a big batch of smoothie once a week and store them in my daughter's old milk bottles. I add whatever fruit I have on hand (fresh and frozen) or buy some reduced fruit from the supermarket then make them that day. It always has some sort of berry, bananas, carrots, and spinach. I make it in my food processor and it makes about 25 oz of smoothie. I divide it up into the bottles and freeze them. She gets a smoothie every morning with breakfast. We are a vegetarian family but even still it is hard to get my 2 year old to get veggies. It keeps her very regular too!
Definitely smoothies. Going to start making Popsicles. One dish I like is pasta with broccoli. My ds loves pasta so I mix in chopped broccoli after cooking the pasta. The broc sticks to the pasta so it jakes it difficult to pick out. Also pancakes. I put the fatter in a blender with spinach, sweet potatoes, butternut squash or any mild flavored veggie. You can't taste it much and it makes them cool colors.
