Lasagna shortcut NBR

DH and I made lasagna and totally made a shortcut - we never boiled the noodles.  Instead, we just added extra water to the sauce/meat mixture.  Then covered tightly with foil and baked as usual.  It worked out perfectly! 

I've used the express noodles before, that tell you not to boil them, but these were just regular noodles with boiling instructions.  They're cheaper than the express kind.  So yay for making lasagna that much more easily!  Just thought I'd pass along the tip.  Down with boiling!

  • I do it too! I usually add like an extra quarter cup of liquid (I like to use chicken broth or tomato juice) when I do it that way and leave vents in the foil so it can evaporate a little.

  • Rynleigh, when I had GD I could still have lasagna but I used like half the amount of noodles. I will admit the my nutritionist didn't help me at all. So if I am wrong about blood sugar you can ignore this. Or you could help me understand it better since I will probably have it again with #2.

  • I had the GD with the boys, but I came away from it pre-diabetic :( So now I have to monitor myself a little closer. For the most part, noodles spike my numbers pretty bad (pastas, breads, and milks are the worst for me) regardless of what I pair them with. I can usually avoid going too high if I really restrict the serving size, but then I just end up sad cause I want more lol so it's just easier to go with replacement noodles so that I can eat a normal serving and not feel grumpy at everyone else being able to eat things I can't. 

    Anyway, lasagna sounds fabulous and I am totally going to try to put some together tomorrow. Today we has pot roast :D

    Give it a shot! We tried it and it was really yummy. Not the same as the real thing, but still good.

    I'll have to try that. I tried to make the fancy Pinterest cupcake pan ones. Total fail. They were so much work and fell apart and the top of the noodles were crunchy.
