WFD next week- Easy answers please!

I grocery shop and start my meal week on Fridays so I am trying to make my list right now.  This week has been hard, I don't know if it is the heat, but I am really sluggish and exhausted.  The heat also kills my appetite so nothing actually sounds good either.  Since DH and DD still have to eat I am looking for some dinner ideas, hopefully non that require too much prep since I am lazy pants.

  • I'm trying to start my list right now too but I'm in a recipe rut! All I've got so far is:

    Fish tacos- never made them before
    Chicken gyros
    Spaghetti w/ roasted tomatoes

    I'm horrible at making side dishes, so probably fruit salad as a side with all of them.

  • Along the lines of breakfast for dinner, you can do burritos (traditional Mexican or breakfast). We've done this several times. If you leave out the hamburger, it only takes a couple of minutes to heat up beans so the kitchen doesn't even get warm.

  • I only do dinner if its easy, so here goes:

    My family really likes the Morningstar veggie burgers (Original, Mushroom Lover or Grillers Prime).  Microwave for 60 seconds, add cheese, and voila.

    Buy the rice in the microwavable packets, buy some flavors that you like (I am partial to the Four Cheese flavor), add any frozen veggies you like, some meat if you have, and voila!

    I like to cook a big batch of ground beef on the weekend and then freeze it in portions for later in the week - good for Sloppy Joes, Enchiladas, etc.

    Buy some soups that look good to you.  You can add these to noodles or rice, and your favorite veggie (meat optional).  I am partial to cream of celery and cream of chicken, but the Chunky soups are yummy too.

    Buy the Purdue "short cuts" chicken, also salsa, quac, lettuce, shredded cheese and tortillas.  Viola - fajitas!  (I usually saute the chicken with onions, but not necessary)

  • Recently learned how to make Eggplant Parmesean and it was easy and a great way to get DD to try a new veggie!
  • Meatball subs- slow cooker
    Pulled BBQ  chicken sandwiches -slow cooker
    Spaghetti 
    Grilled chicken 
    KFC. LOL 

    I obviously need some ideas as well. I suck at dinner.

  • For some reason one dinner sticks out for easy light prep. Pork tenderloin injected with your choice of marinade and bake it. Make peas and mashed potatoes.

    I do a twist on a BLT sandwich where I substituted fried provolone cheese for bacon (DH is vegetarian).  Like, you literally just put a slice on a frying pan or griddle, wait til it's bubbly and mostly brown, flip it with tongs to finish cooking, then put it on a paper-towel-covered plate to cool/dry.  Bonus points if you use baby spinach instead of lettuce and avocado instead of mayonnaise.  It's great for cool weather, especially with kale chips and sweet potato fries. :-)

    ETA: WARM weather.  It's a good warm weather meal.

    DH has also requested the chicken salad I make with grapes, celery, green apple, craisins and sunflower seeds.  I serve that on whole grain wraps.
    Dang, DC...that is some gourmet shiz up in your house.  I think I'm fancy when I bang out chicken parmesan.

  • Do you have a crockpot? If not you must get one, they are wonderful. If so, here are some ideas:

    Chicken verde - put fresh or frozen chicken in crockpot with 1 jar verde sauce. Can be used for salads or tacos throughout the week.

    Broccoli ravioli - cook frozen ravioli and broccoli sauté in another pan crushed garlic. Add ravioli and broccoli to garlic, add salt, pepper, and parm cheese to taste.

  • Crockpot salsa chicken is my easy go-to, especially if I'm working late. Just shred it and make tacos or burritos out of it. Or pizzas with store-bought crust! But tonight I'm having Chipotle haha.

    @kleigh926 - recipe for the creamy crock pot chicken puh.leese!  Sounds so yummy!
    @lbonga1 - do you put the whole chicken in the slow cooker?  add anything else?

  • @fignewt74‌ , I just use a few chicken breasts (maybe like 4?) and pour a jar of salsa over the top. I know some people that use a combo of salsa and chicken stock too. Then you cook it, and shred it once it's done.

    I'm so predictable and boring.  My meal plans lately have been the same every week.  One night I'll do a beef roast, another will be a roasted chicken, one will be salmon patties, one will be a pork roast (can you tell I'm a fan of the crockpot and roasts), and another probably beef liver or some other organ meat.  Weekends are usually more spontaneous - we grill out one night (I think all we have left is brisket, so we'll probably do that next week) and the other I try to do something fun like homemade pizzas or BLTs.

    My meals revolve around the meat.  I just throw some kind of veggie together with it and then we do fruit for dessert.  Veggies are usually baked broccoli, peas, sauteed asparagus, spinach salad, zucchini noodles, or homemade cole slaw.
