NBR : Crockpot meals

I'm looking for some relatively easy crockpot meals. Please let me know if you have a favorite. I never use mine, and I want to get some good ideas that don't require a ton of ingredients. Thank you!

  • I make this all the time: Shredded Salsa Chicken

    Boneless skinless breasts thawed
    1 jar salsa
    1 packet taco or fajita seasoning
    throw it all in the crockpot on high for 3 hours
    shred up the chicken with a fork and serve in tacos, taco salads, etc. Delicious! You can also do this with pesto. Just chicken, chicken broth, and a jar of pesto on high for 3 hours. Shred and serve on quesadillas or in a wrap. So much NOM. Now I'm hungry.

  • Chile Verde is really good in the crock pot. This one looks similar to what I do.
    I also make cilantro lime rice and throw it in a tortilla together. So good!


    It's also really easy to toss a whole chicken in in the morning with some seasonings on low then when I get home I have chicken with some rice or pasta on the side.

    This is my favorite beef stew recipe.  I usually use a couple more strips of bacon than the recipe says, about 1.5 lbs of meat, and as many carrots as I want at the time.  I use apple juice for the sauce, haven't tried it with beer.  Oh, and I serve it over egg noodles, delicious!

     ETA:  I found 7 hours was too long for cook time, I would check it at 6, but it depends on your crockpot.

     

  • 3 ingredients!  Frozen chicken breasts, can of chicken broth and dry italian dressing mix.

    Toss them all in and set on low for 10 hours...so good and smells amazing!

  • I love slow cooker chicken tacos, so easy!  You can use the meat then for enchiladas, what ever

    Same with beef roasts. You can make nachos or pulled beef sandwiches.  BBQ chicken sandwhiches,

    Slow cooker fajitas.... there are so many thing you can do.  Google it or jump on pinterest, these are a few of my go - tos

  • Slow Cooker Potato Soup

    Ingredients
    4 slices bacon
    1 1/2 cups chopped onions
    5 cups peeled russet potatoes (about five potatoes)
    1 medium stalk celery
    1 carton (4 cups) chicken broth
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 cup all purpose flour
    1 1/2 cups half and half or milk (we used skim milk and it was fine, but it might be a little creamier if you use half and half)
    8 oz. shredded Cheddar Cheese

    Instructions
    In skillet, cook bacon over medium heat, until browned & crispy. Remove from skillet, and drain on paper towels, then refrigerate until dinner time.
    In bacon drippings, cook onion over medium heat 4-5 minutes, stirring frequently, until tender.
    Spray slow cooker with cooking spray. In cooker, mix onion, potatoes, celery, broth, salt & pepper. Cook in slow cooker on low for 6-7 hours.
    In small bowl, beat flour and half and half (or milk) with wire whisk until well blended; stir into soup.
    Increase heat on slow cooker until high. Cover; cook about 30 minutes longer or until thickened.
    Stir in cheese until melted & smooth. (If you want fewer lumps in your soup, you’ll want to mash the potatoes a bit with a potato masher.)
    Crumble bacon, serve on top of soup.

    This one is by far my fav slow cooker meal, Chicken Taco Soup.  I use already diced and frozen chicken.  I buy my chicken in bulk from Zaycon Foods so I always have chicken in the freezer.  Throw the frozen chicken (diced or breasts) with the other ingredients and let it cook!  When ready, top with shredded cheese, guacamole (if you like) and tortilla strips or crumbled tortilla chips.  If you use the breasts, you will need to fish them out of the soup and shred or chop them.

  • Not trying to steal the thread from @Roseypants, but does anyone have any tips on how to keep your crock pot meals from getting really dry? I've made a few chicken dishes and they are so dry and overcooked. I'm gone 12-13 hours every day for work, so my crockpot usually cooks on "low" for 8 hours (or whatever the recipe calls for) and then automatically goes to "keep warm." I know it's getting cooked too long, but I don't have much of a choice.

    I've started adding extra chicken broth (water, whatever) just because of this...seems to be working so far!

    Also make sure you are filling the crockpot till 3/4 full or it will cook faster than you want it to.
