Chicken recipes

I bought some delicious sun dried tomato chicken from Trader Joe's and still have 7 pieces left over after we finished dinner tonight. Any suggestions on how I can use the left overs? I should mention that I'm not too handy in the kitchen.....still learning. Thanks

    I just made this last week -- put the whole package in the crock, shredded and then tossed with penne, marinara, feta, Kalmata olives, pine nuts, Roma tomatoes, and basil.

    A couple of other thoughts:
    dice it up and keep it on hand for easy lunches for LO

    Shred it and make a chicken salad for lunch for you -- a little celery, onion, italian dressing, mayo (if you like mayo), and quinoa or brown rice or couscous
