  • Leftover enchiladas. Again. Been eating them since Saturday! They have pinto beans, potatoes, and mushrooms as filling with homemade enchilada sauce and a cashew cream topping. They are good, but the recipe was quite time intensive and they aren't so good that I will make then again. It's been a crazy week with LO such, so haven't had much chance to cook, although I'm planning to try to cook BBQ Black Eyed Pea burgers soon.

    QOTW: I don't have any family dishes from growing up - pretty much all of our meals included meat. But, I do kinda wonder what will be some favorites as our kids are growing up. I do make a black bean and sweet potato enchilada with verde sauce and my version of Spanish quinoa as a side dish on a fairly regular basis that I hope is a family favorite.

    @ATXMommas that sounds so good! I have to be a carb-freak these days, so no way I could eat that right now, but once this GD is over those sound amazing. I love cashew cream!!

    Tonight since it's my burfday AND we have childbirth ed class, we are going for an early dinner at one of our favorite go-to restaurants in Seattle, Cafe Presse (menu here). It's (accessible), inexpensive French food. Usually they have a nice fish-of-the-day dish I'll get. Maybe hard-boiled eggs with mayo. And their green salad with hazelnuts is awesome. Sadly, no baguette or french fries for me :(. But, still excited because we love it there, and it's en route to our class!

    We have been cooking at home a lot lately.We've been having (meat of choice - usually chicken strips with a wee bit of lower-carb bbq sauce, or Trader Joe's Carne Asada...) + one ear of corn on the grill, and a green veggie... we've been doing this a lot. It's kind of the perfect dinner! Seems the carb/protein balance is ok for my blood sugar, and who doesn't love corn on the cob on the grill in the summer??  And, no pans! No dishes! So that's my "recipe" :).

    We live in Seattle and used SRM for our donor egg IVF cycle

  • Ideally I would order a pizza and go to bed early tonight but alas, I really need to keep cooking.  I have so much food at home we need to eat and I'm the only one who knows how to prepare good meals.  Maybe breakfast for dinner?  Or meatloaf and mashed potatoes?  I think I'll do meatloaf and mash.  That sounds good.

    I'm so tired.  I had to wake up early for a monitoring appointment and cooking (heck, working, too) just doesn't sound like fun right now.

  • Wifey is working really late tonight so I'll just have some leftovers while I work on stuff around the house. 

    QOTW: Does ice cream and/or pumpkin pie count? hahah

    I don't have a favorite food really, I imagine our kids will like what we eat because they'll grow up with it. I suppose it will be interesting to see what they love and what they  hate though. We definitely don't have any family dishes though. Most of what my parents made was cheap, fast and bland, same with J's family. My stepmom made some pretty amazing chile verde, so we'll make that for sure.

  • Going to a co-workers house for happy hour, so I'll either fill on on apps or will stop by someplace on the way home to get something.

    QOTD: I have no idea. I grew up on a lot of my grandmother's casseroles - but we don't eat those types of foods. I also ate a lot of lobster (parents from Maine and all...) but when the kids have tried it, they didn't like it. We are going to NYC this weekend, so I'll introduce them to a street hotdog. :)

  • Seared pork medallions and rhubarb chutney thanks to Blue Apron!  

    Since Danielle's more of the cook in the family, I made us sign up as soon as I started maternity leave.  They send you everything you need for three meals each week with fool proof recipe cards. And each meal takes only 15 to 20 minutes tops to make. 

    It's been a life saver since we've only got one car and Danielle uses it to commute for work. So running out to the grocery store is not really an option on most days.

    QOTW: I'm more of a baker, so I'm looking forward to introducing Charley to the wide world of cupcakes and cookies just as soon as she's allowed to have solids :)

  • We got our first CSA box today which included scapes. So I think I'll be doing a tofu stir fry or a salmon pasta dish incorporating those. 

    QOTW: It's not really a family dish, but I look forward to holiday cooking with a future child.
  • Tonight's a grilling night! Someone gave us a huge gas grill BBQ! Score! So, my LO wants us to cook BBQ corn! So, we'll do that along with some kind of meat. Nothing fancy, just simple and sweet! I'm glad that there are times I can make something that he'll eat/request. Whew!
    I would love more grilling recipes so I don't undervalue the benefit of our grill.

    I really want to introduce my son to some Russian dishes that my grandfather used to make, but he doesn't show any interest in it yet. I know we do lot of comfort food at our home, so we'll get our "international" exposure as he gets older! I loved it when my mom did it with my brother and I.
  • I've been so busy all morning working on my resume for a job I applied for today (FX)!!  So tonight we'll be having an Chicken Tikka Masala and Naan (both pre-made from Costco). If I feel up to it I might make a little rice ;-)

    I also just signed up for a CSA delivery (first day is tomorrow).  Our CSA also brings groceries, but I forgot to add items to my cart by the cut off time, so its off to the grocery store we go later today.

    QOTD:  My mom made a few really delicious German dishes but I haven't attempted them yet - I should get the recipes though because I'll like to pass them on. I do make a really yummy schnitzel which Kaden already loves.
  • My wife made cod with asparagus, red potatoes and a tomato vinaigrette.  It was delicious.  She also bought gelato for dessert. :)

    QOTW: My mom's steamed chocolate pudding and buttermilk sugar cookies, both of which we typically eat at Christmas.

    I cooked tonight! First time since we have been home that I felt up to it. I made salmon, green beans and cauliflower my favorite -- I have mentioned this meal before). Now I am full and exhausted. P.S. I even did the dishes after! I am way too proud of myself hahaha :)

  • @KH826, I can imagine that making (and eating) a favorite meal at home would go a long way toward helping you feel a bit more "normal!"  Hope it was delicious.  Now rest! :)

  • @2MamazInSeattle - Happy Burfday!

    Tonight we had roast chicken thighs with rice and veg.  Nothing special.

    I can't wait to make my Dad's 'Specialty' for our family.  It's actually nothing special at all, just noodles with diced tomatoes, mushrooms, green and red peppers, with ground beef. But it was a popular dish when I was a kid. I'll tell my little one all about their Poppa while I make it.   Plus Christmas dinners, I can't wait to have Christmas with the family.

  • Tonight we had pot roast with fresh carrots, asparagus, and baked sweet potato fries from the local farmers market.

    I can’t wait to teach our children how to cook the dishes that my grandmother’s used to make for me.  Two of my favorites are Rouladen with Spatzle and crepes with fresh fruit.

  • Last night C made some frozen pizza. I usually cook but my temp was running slightly high and my energy was at zero so she stepped in. I made a snack of hard boiled eggs with pepperoni, cheese, hot sauce, and pickle all stuffed in the missing yolk divot. When I tried to share C started mocking the snack, lightheadedly saying if I must be pregnant etc but when she went to take a photo I started balling. Now it's funny but at that moment I was so upset that she was insulting the snack I wanted to share. Only on 9dpo so hopefully all that silliness is a good sign since I'm not a big crier and will rarely give in to frozen pizza over preparing a full meal. Fingers crossed.

    QOTW: Hard to pick just one. Food is more than fuel at our home, we are very passionate about it. For C I think it'll be grits and eggs for breakfast. I'd like to pass down goulash from my grandmother, and the skill of canning/preserving from my other grandmother. Both are gone now so it would be a great way for our kids to get to know them.
  • I've received scapes in my CSA before, but never know how to cook them. Any suggestions? :)

  • @ATXMommas, we usually make garlic scape pesto, but it typically has cheese in it. You can chop them and use them in place of garlic, but they are milder so you need more.

  • Regarding the scapes. They are pretty awesome. In our box were five very lovely ones. I put two and a half in last night's tofu stir fry, and chopped half into the salad I had for lunch today. Raw they have a bright, but mild garlic flavor. More subtle when cooked. I really liked them. 

    Tonight I'll put the last into a salmon pasta dish with grape tomatoes, the rest of the CSA zucchini, and some onions.
