When your kids get old enough to write, will you have them write out their own thank you cards in the hopes that they will learn to do them on their own when they are adults?

I plan to have LO do them for most if not all gifts.  My mom didn't really have us write them as kids, so I didn't really know about doing them until I was much older.  I want LO to learn about them earlier than I did.

I hope to make it fun for him, like maybe have him color pictures of him with the gift or something.

Yes for all gifts, but with help. My mom used to leave it up to me to compose and send all thank you notes and I hated it. I might compose and have them sign it or add a sentence to the end until they are teens.
I definitely plan on helping and letting him do them age-appropriately.  So when he is young, "thank you for the toy cars" and a drawing would suffice, but I'd expect he would write more as he got older.
