Favorite easy-to-make dinners

What's your favorite easy-to-make dinner that both you and LO will eat? (By easy-to-make, I mean not too many ingredients and a shorter prep time than your other dinners.) Bonus points for recipes!

  • Spaghetti and meatballs. I make a double batch of sauce and meatballs and freeze half for another night.

    Stir fried zucchini, summer squash and kielbasa tossed with rotini noodles.

    Quesadillas. Cheese usually but I'll throw in leftover steak, chicken or veggies if I have them.

    Veggie fried rice. You need cold rice for this but it's great. Heat a few tbsp of oil in large pan, add cooked rice and stir it around a bit. I add in some chicken base (or you can use a bullion cube reconstituted in 1/3 cup of water instead of 1 cup of water), soy sauce, onion and garlic powder. Add in a bag of frozen mixed veggies ( I use the pea, corn, carrot and green bean mix). Once those are warmed up, scoot the mix to one side and scramble a few eggs in the pan them mix it all together.

    Grilled cheese or grilled pizzawiches (mozzarella and pizza sauce grilled cheese)

     BFP on Cycle 17 09/27/12. EDD 06/04/12! Please Stick Baby! A/S 01/22/13 Baby looking great. Officially TEAM BLUE! Jack is getting a Baby Brother! RCS scheduled for 05/29/13. William Daryll born at 9:59am on 05/29/13. Left ovary and tube removed due to peach sized tumor found during RCS. Pathology came back benign!

  • Pepper and chicken skillet. Stir fry two chopped chicken breasts, one chopped onion and two peppers. Once cooked add in cooked pasta (two cups when dry) and one jar of pasta sauce. Top with shredded mozzarella!

  • Sometimes we do like a breakfast hash. Put chopped bacon in a skillet then onions and garlic until they soften. Add diced potatoes with lots of seasoning. Cook until side an crispy. Add some eggs. Yum. It's super filling and easy

  • Tacos and slow cooker pork and beans are great for all the kids and parents in our world.
    Also all babies and husbands seem to like this recipe and it's nice because it's it a true healthy one pot meal:

  • My absolute favorite is what I call sweet potato smash.

    Sweet potato, diced peppers, can of diced tomatoes, diced onions, and ground beef. All sautéed in evoo for as long as it takes to cool the beef.

    The best thing about it is there are so many ways to eat it. Straight, with pita chips, add cheese and avocado make a quesadilla, the possibilities are endless.

  • Goulash- just brown your ground beef and throw it in with noodles and tomato sauce. I sometimes sauté mushrooms and put those in with it.

    I've been doing this with zucchini and yellow squash added. It's yummy and LO gobbles it up. I also pulled aside some of the chicken and veg before the sauce got added. I chopped it up pretty fine and used it to make a quesadilla for LO. He loved that too.

  • LO doesn't eat it but we love BLT's at our house.  Usually LO just gets a turkey sandwich when we have them.
