NBR-camping recipes

This weekend we are taking Emmett on his first camping trip (yikes!) with my family. We are in charge of breakfast, lunch, and dinner one day. My mother is making chili the first night, and I'm at a loss for what to make the 2nd night. I looked on Pinterest, but it seemed like most of the pins were exactly the same thing.

So long story short, I'm turning to you ladies for your tried and true camping recipes. Are there any recipes that you just love? The only thing I can't do is fish. My mother will not eat any type of seafood. If you have a great breakfast or lunch idea, that would be welcome as well!

    Do you need to actively cook it there or is reheating ok?  We tend to cook ahead and freeze our meals so that we only have to heat and eat over the camp fire or stove.  

    What kind of camping are you doing?  Car camping?  Trail?  

    We usually do remote site - hike or canoe to - camping so all of our equipment is as light as can be.  If you have added options for camping out of a car, that would change the equation.

    If it helps, we took M camping for the first time last October and he had a great time!  We're going again in a few weeks and I'm more nervous about this one.  Last time he wasn't crawling and was light to carry.  This time he's running all over the place and I can't just pop in the carrier all day anymore.  I think Emmett will love it!

    We always do chicken over the fire with potatoes and corn. 
    For the Chicken we get a disposable tin pan (casserole dish size) throw a bunch of chicken thighs and legs, a bottle of BBQ sauce cover with tin foil. Cook over the fire. 
    For the potatoes another tin pan. Slice potatoes add a bunch of butter and a bit of water and some grated cheese cover with foil. Throw it on a grate over the fire. * last time I preboiled the potatoes before we left and this cut down the cooking time by a ton. 
    For some breakfast ideas we have a small coleman stove. I usually do bacon and eggs one morning, pancakes and breakfast sausage another and cereal the last day. 
    Lunches  are typically sandwiches but I have done chicken Cesar wraps ( really easy bag salad , precooked chicken and some wraps ) 
    Good luck we are going camping at the end of the month this will be DD's first time.

    edited to add : we do not do remote camping that would probably change a lot of my menu. We are able to have our vehicles on site with a bunch of coolers etc.

  • Usually we camp pretty remotely, but since my mom refuses to camp anywhere other than a campsite. That makes cooking a little easier dive we'll have their small teardrop camper to cook in.
    @krwact‌, I hope Emmett loves it. My biggest worry is him not being able to sleep!

  • Do u have pie irons? Thats the classic camping dinner! Bread and butter and whatever u want to put inside. Pie filling in bread for dessert! Grill kabobs, u could prep everything before and just put in containers in the cooler. Oatmeal is an easy bkfst.
  • Instead of trying to find "Camping Recipes" you could try and search for "one pot" recipes or something similar.  
    We always do Mexican corn, steak, and potatoes wrapped in foil for our dinner, sandwiches for lunch, and fruit and yogurt for breakfast.  
    Also, I've made this mistake before, but if you decide to pack eggs, make sure to buy the Styrofoam containers. The cardboard ones fall apart in an icy (watery) cooler
  • Good luck! We took O a few weeks back and he tried to eat ALL the rocks and touch the fire each time he looked at it. We are tent campers but bring a small weber propane grill and have 2 propane burners too. We just marinate and prepare our food but usually eat a normal hearty dinner when we're camping.

  • darn, I think I might have seen this too late, but we do foil packets (chicken, peppers, broccoli, etc with butter and seasonings) that we cook over the fire. For breakfast, we usually bring a skillet with us and just cook bacon, eggs, potatoes on the fire as well. We usually tent camp so we'll bring a grate with us just in case there isn't one and put the skillet on that.
