easy staple meals? - lurker

Hi.  I'm a lurker who keeps trying to intro, but then I never actually jump in and post.  I do watch your meal plan threads though, and you guys seem to have some good ideas, so I'm hoping you can help me.  I'm trying to find some new and easy staple meals.  I'm pretty bored with what we usually do and DS1 (27 months old) is starting to show preference for certain things.  Right now, I usually try to do one or two new meals per week and the other days are staple meals.  One day a week, DS1 usually eats by himself and DH and I either have friends over after bedtime for dinner, or we go out.

Our usual staple meals are spaghetti and tomato sauce/olive oil and veg, taco bowls, some mixture of meat/pasta/cheese casserole, brinner, and fried rice.  DS1 is starting to not eat chicken (we tend to eat it often) or anything that is at all spicy. 

Anyway, sorry if this is tl;dr, I need new easy food ideas.  We like cheese.

  • We like to do a fondue Friday every once in a while. DD loves it. We do steak pieces, broccoli, bread, and mushrooms to dip.

    Pizza is another one that is fun to make with kids.  We get the dough balls from the deli and vary our toppings.  

    On hot summer nights we do veggies, hummus, and a cold pasta salad.

  • Here is an easy one we like, you can either use homemade or store bought for the enchilada sauce, taco seasoning and cornbread. Obviously store bought it is super quick and easy.  

    Make taco meat (beef, chicken) whichever, like you would for regular tacos.  Mix with 1 can enchilada sauce. Put in greased casserole dish.  Then make one box jiffy cornbread mix according to package directions, add in about 1 cup cooked corn to the mix.  Put the cornbread mix on top of the meat and bake at 350 for 20 minutes.  Then take out and top with some shredded cheese, bake until the cheese melts and the cornbread is done.

    Fondue is a great idea!  DH and I have done it, but I never really thought of how much a kid might like it.

    We've done pizza, but it can get kind of a PITA during the week, since we only have about 2 hours between daycare pickup and DS2's bedtime. 

    Cold pasta salad sounds fantastic.  That is most definitely going on next week's meal plan.  Do you have one that you like?

    That sounds great!  DS1 loves all things corn and corn-related, so this will probably be a winner.

  • My easy, go to meals for summer are similar to yours plus: BLTs, grilled cheese, any kind of stir fry,or we just throw some meat and veggies on the grill and serve over rice. 
    I haven't had a BLT is forever.  I'm not sure how that happened.

  • One of our go to meals is french dips. Another one is sloppy joes. We also do some variation of tacos (taco salad, soft tacos, crunchy tacos, enchiladas), spaghetti, home assembled pizza, grilled cheese and tomato soup, and baked chicken nuggets and french fries.

  • Quesadillas are easy and you can make different varieties. I sometimes will make pizzadillas with pizza sauce, cheese and pepperoni. Also, I have made dessert quesdillas with apple pie filling. These have been a real hit!

    Some other ideas are baked ziti, pulled pork/chicken/beef sandwiches (I buy this pre-made and just heat up) and tater tot casserole.

    DH bbqs a good amount in the summer but DD isn't a fan of the "grill flavor" so I usually have to make her something different, unfortunately.

    I will definitely try this!

    This week I am just doing tiny macaroni and pouring on some Italian dressing and adding feta, olives, tomatoes, and celery.

    Our staple meals are spaghetti, tacos, and sloppy joes. we like beef haha. But we do a mix of burgers, chicken fried steak, and fried chicken too. Every now and then I will make a chicken pot pie casserole, enchiladas or white lasagna (alfredo, chicken and brocolli with lasagna noodles)
