A call for non-bread recipes...

Hey everybody. I was sick for quite a few weeks and they finally figured out the problem is bread and dairy products.

My problem is all I used to eat was starches and carbs - pasta and rice, sandwiches, pretzels and Pringles, etc. I have very little experience making filling stuff without tons of starch or bread products.

Does anyone have any recipes that are quick and filling and not bread stuff? I can eat whole grain occasionally, like I had honey nut cheerios this morning, but that's a once a day thing.

I'm just lost. I've been eating tons of soup and fruit and veggies by themselves because I have no real ideas, and they just don't make me feel full the way bread stuff does, so then I'm still hungry and eating all the time. It's a vicious cycle.

  • Thanks ladies. That actually makes a lot of sense, I never got enough protein before either. That's probably why I just kept eating all the carbs to make up for it.

  • Aren't you a type I diabetic? I would see a dietician who can make some suggestions on how to lower your starch and increase protein while keeping your sugars in check.

  • I just threw this in the crockpot for tonight. I did use cheese in my meatballs, which you wouldn't be able to do. I would up the spiciness for extra flavor.

  • I eat a lot of beans and quinoa, since I'm a half-assed pescetarian with not a lot of extra money for fish. If you make a batch of quinoa, it stores for several days in an air tight container in the fridge. It's easy to add things to it to make a meal without spending a lot of time. For lunch a couple times last week I had quinoa with roasted bell peppers that had been prepped ahead of time and tossed in olive oil with salt and pepper. I had a spinach salad with that, and didn't feel like I was starving all day. A lot of people also add cold quinoa to salads for an extra protein boost.

    Tonight I'll be making some sweet potato chili to eat for lunch during the work week. Happily, DS likes it, too (so that'll work for either lunch or dinner one day next week for him). 

    I also love these quinoa oatmeal muffins, as does DS. You should use gluten-free oatmeal if gluten is a problem. They're pretty good with blueberries, too.

  • I'm actually Type II @loveactually4 :) I take one shot of insulin at night to make sure everything stays covered but the other control is pills. I did see my dietician right before my primary care doctor decided to have me go GF but I clearly need to see her again sometime soon.
    I might look into paleo. Doesn't @justaphase do paleo?

  • @RondackHiker I did see her just a couple weeks ago at least, but she was unaware of how serious my stomach issue was (we all were, to be fair) so she just gave me a lot of general suggestions about more fiber and more fruits and vegetables, which I have still been trying to do within reason minus the bread and dairy.
    It is type 2 and it is well controlled, for the record. I'm pre-diabetic a1c wise :)

    Are you actually going gluten free or just cutting back?

    Some things they've done are starting with good supplies... So look at your soy sauce and ketchup and BBQ sauce and so on and make sure it's all gluten free. Then you can always grill a chicken breast and have a salad. There are some great cooking sites for celiacs.

    You can do spaghetti squash or peeled ribbons of other veggies as a pasta stand-in. The gluten free pasta is naaaaaasty. Lettuce wraps instead of sandwiches.

  • I am I guess cutting back. She said I could have like a serving of whole grain stuff per day, thus the honey nut cheerios.
    Aw, boo. I was looking into the GF pasta. I did see the spaghetti squash and cutting up zucchinis into strips for noodles and cauliflower into "rice."

  • Try the website Peace, Love, and Low carb.  I love a lot of her recipes and they make you feel full.  My favorite of hers is a Philly stuffed green pepper with roast beef, onions, provolone cheese, and seasonings in a green pepper boat.

  • I would check out international cuisines. Many use a lot less carb than we do.

    Fuschia Dunlop writes great Chinese cookbooks; the one I use is called Every Grain of Rice. TOTALLY recommended.

    It's assumed all the dishes are going to be served with rice, so none of them INCLUDE rice if that makes sense. And if you really want the rice, brown rice would be fine
