Our quick go-to easy dinner lately is a Knorr Sidekick with ground pork or chicken and frozen veggies mixed in, or canned whole tomatoes.
We've mixed in spinach, frozen peas and frozen broccoli (not all together) into things like Parmesan pesto pasta or creamy garlic pasta. It's not the healthiest )sodium and cheese), but it's easy to get extra vegetables mixed in.
We've been getting pre-stuffed or marinated chicken from the grocery store and then just steaming veggies or adding it to a salad. Not too much prep. No offense @cnbean but it will be awhile before I can eat honey mustard anything :P
We do chicken sausage or turkey burgers on whole wheat rolls with either a steamed ear of corn or salad quick and tasty. Also I make up things like broccoli salad or pasta salad on the weekend while DH is home so I have quick sides to just pull from the fridge.

Swedish meatballs with mashed potatoes and mixed vegetables. I buy the frozen meatballs from Ikea.

Ribs, watermelon, salad, and red skin potatoes.
