My only caution with doing the shutters is that depending on the clearance from window to sink, they can get a lot of splash back and get gross.

It looks like you window may be wider. I'm torn but I can't sit on this much longer because the sun shines through all day past 5 o'clock and it's getting way hot and the air is non stop when it's on because so much sun!
I think shutters would look tidier than wood blinds. You don't have the cords hanging everywhere and I hate when blinds are pulled up crooked. Same goes for any blinds (roman too). I think white shutters would look really crisp with the colours you have in your kitchen.

@NotSharknado you would need to either make the cornice or have it made. It's really not difficult. Have someone build the box and then cover it with batting & fabric, using a staple gun. You could probably find some really awesome fabrics.
