My LO is 3 weeks old and I am a SAHM. I love breastfeeding and find it very easy for us. I do want to eventually pump just so I can have a stash for date nights, travelling, etc. I don't want to mess up anything with my breastfeeding, as it's going so well (thank goodness!). When should I start pumping and how often? Like I said, I am not going back to work or anything like that, so would 1 pumping session be good enough? I don't want to be pumping all day when I don't really need to. I want my LO to take a bottle at some point b/c I have heard babies have a hard time taking a bottle/being introduced to a bottle past a certain age.
Also, I have no idea how many oz he takes when I nurse... so how do I know how many oz to feed him with a bottle? I have a Medela PISA. Can you pump directly in bags or just the storage bottles it comes with (and then transfer to the bags?)

I pump straight into bags, it's always worked ok for me. I don't care too much about volume accuracy as I only track to ensure my supply isn't going down and I put it into another bottle and measure that way to keep track of what baby eats (though if I'm being honest, I don't do a good job tracking that any more, he eats when/what he wants).
Also, once your supply has regulated (4-6 weeks from now), you should be able to go longer stretches without pumping or feeding and it's not a huge deal. Just don't do it all the time but one date night a month isn't going to make or break your supply. That's been my experience but I only pump so maybe it's different if you're nursing.
